My stepdad is Japanese and he always makes hotpot in the winter. Omg it's one of my favorite dishes, I need him to teach me how to make the broth. He makes his a bit different and I haven't tried it with the 2 different sauces before. Usually we use ginger and add it to the broth, then I use a bit of soya sauce to my tofu. He also only cooks veggies in the hotpot, sometimes he will add a hard boiled egg for us. I'm glad I found this video bcuz I would like to try and make it for myself, I will have to buy a small pot and a small heating element 😁
wow that sounds good as well! well, in Japan there are surely more than 50 to 100 variation of Nabe Hotpot and it also depends on regions. so just be creative with it! you actually don't necessarily have a special pot, but I used to use just regular metal pot for it and heated on the stove and brought to the table when ready.
I lived in Kainan Shi in Wakayana Ken for a year. A local family invited us for nabe dinner most weeks. In winter we sat at the kotatsu with the warm blanket. It was very warm, the food was delicious, and the company kind and hospitable.

Hotpot is one of my sons favorite meal. Eating hotpot is the only time my boys eat lots of vegetables 😁 with their meat. Now I know how to make the two sauces from scratch. Thanks so much for sharing the recipe.
I think of japanese cooking as being the healthiest there is. Now I learn from your channel everything I need to know to cook healthy at home. I want home cooked japanese food, not the delivery or restaurant, which is not traditional in restaurants in Europe. There is a tndency in restaurants to make a europenization" of recipes. oh, that is strip of KOMBU, or Kombu kelp. Just out of curiosity, are all the ingredients washed prior to cutting? And the sound you made is soooo cute when water came out from the tofu box as well as oil dripping from sesame paste bottle, hahaha~~
My only complaint about hot pot is sooo many dishes! Plus it's more involved but man is it good. Thx for this. I wanna know if a small Dutch oven will work for this as well?

Bok Choy is not suitable for steamboat. Use Spinach, water spinach, oyster mushrooms. Green onion not recommended. Instead chopped and use for noodles soup
i am sorry, that you don't like the eating part... in Japanese cooking show i.e. for Japanese or in Japanese cuisine, eating is an important part. but if you don't like it, pls skip to the end or to another video. but thank you for the feedback. I will try to eat it cleaner in the future.
@@taijiskitchen Oh .. please don't 'eat cleaner' I loved the 'slurp aleart' and the joy in your eating. Some people are picky about eating habits, personally or culturally. This is an introduction to Japanese (albeit mixed *winks* ) culture and the slurp and joyful eating is very attractive to me.

Eating raw beef is primitive and hard on the digestive system. Animals eat raw meat. Humans have a different metabolism and at the same time our heightened sensibilities require cooked meat. Steam cooked beef would be fine with your hotpot stew filled with veggies and tofu. Civilise.

i don't know too well about meat parts, but depending on if you like lean or fatty cuts. if you prefer lean, then round or shoulder, but if fatty, then loin or rump. for the pot, in most asian supermarket or surely online.

My local Asian market has changed my life. They’ve got it all. From thin sliced meat for amazing prices to noodles and sauces and my favorite trumpet/king mushrooms. Plus you get so much more food than traditional American stores. To top it off next door is an Asian market for restaurants and they carry every cooking utensil you could ever need for great prices as well. And now I’m hungry. Love these videos.
You make me want to eat whatever you make. So I shouldn't plan on watching whatever delicious food you make before cooking whatever I had planned! The way you enjoy your food is very contagious! I read the thanks you say before and after eating, but it sounds different than what I read. I want to learn that, too. Eventually maybe they will absorb into my brain...
Ahhhh, Shaun Shaun is my favorite, I grew up next to little Saigon in S. Cal. I moved to Oregon and there aren't any restaurants in my town, I would have to drive at least an hour or more to get to one. Thank you for the recipe, now I can make it at home anytime I want!
