I cook it with chopped dates, figs and raisins, clove, cinnamon, ginger its is so yummy I toast it first on burner then cook

Excellent description of Teff , been using for years but did not have mastered making it solo I do add it to other grains. But was able to make it solo with your recipe.

One year after your posting this I watched it! Very informative and easy to follow, I liked your commentary. 👍🏼 And yes I’ve tried teff grain it’s delicious! I have horses and we feed teff grass or ‘hay’ to them. It’s great as it’s low carb for insulin resistant horses but nutritious. Thanks for featuring teff!

In Ethiopia, we never cook Teff like this. We rather bake Enjera (flat bread) from its flour.

It is my native teff wich is tiny but full of iron The best thing you should make it or to flour then you can bake cookies bread pitta in fluffy injera Which is know by Ethiopian . You can look also on RU-vid channel how to bake how go make injera.

I found some flour made of teff from Bob's Red Mill. It is really delicious added to pancake batter! Hearty and nutty, beautiful tawny color, very autumnal. I'm almost out, could only find the whole teff (Bob's again), so this is very timely for me. It's so small, I wonder whether the whole grain can be used directly in the batter, or whether it needs to be precooked first. Looks like the latter, but I'm lazy in the morning, and will probably try adding some dry to the batter to see if it's a viable shortcut---unless someone advises me otherwise.😉

That’s a great idea. It’s so small it’s almost flour-like and seems you could use it as such, especially since it will be cooked in the batter. Please keep us posted. 😀

@@IWantToCook You know, I just thought of another option---presoaking overnight. Or soaking in hot water (in the microwave) the morning of, if I forget to do it the night before. I do this to plump up poppy seeds when I'm making lemon-ricotta-poppyseed-almond pancakes, and it works great. Bet it would work on teff, too. Just found your channel, btw.😃👍

Everyone have a preference of foods of different cultures. I tried eating Ethiopian food, my esophagus closes up. If they're eating this grain I probably can't eat this Teff. I would try this Teff anyway. Thank you the tip.

I can take anything that is healthy and turn it into something completely unhealthy. I am going to try this with butter and brown sugar for my breakfast. Maybe a little drizzle of cream. Seriously!

Or toast it and spread the butter 🧈 onto it then drizzle with sorghum (not molasses). Lightly sweet. But still delicious.

I’ve tried rinsing and couldn’t find a strainer fine enough, lol. If you really prefer to, cheesecloth should work. Since this is boiled, I didn’t worry about contaminants or anything, and always achieve tasty results. Cheers!

You should look up "Injera" the traditional Ethiopian flatbread, Ethiopians eat this with "Wot" which can be many variations of Ethiopian curries and dishes. It's absolutely delicious.

Hi, there - I can’t really answer that question since I trained as a chef and not necessarily as a nutritionist. I tried to cook this as a cereal/porridge kind of thing the night before but when I left it out to cool till morning, it kinda hardened together a bit sorta like a flan-bread type of way. Is that how they make bread with it? Kind of interesting

I followed this same method but mines keep coming out sticky and sticks to the bottom of the pan. Lol 😅 I wonder what I am doing wrong? Maybe keep heat on low?

You might want to vary how much water your using. I'd try adding a bit more at first to see if that helps. If sticking continues to be an issue, a good-quality nonstick pan might be helpful here. Cheers!

Hi! I used 1.5 cups of water per cup. You can use up to 4 cups of liquid per 1 cup of teff if you want the finished recipe to be more liquid. Hope you enjoy! 😊
