How to Correctly Size Steam Table Pans 

It really depends. Many steam tables are hooked up to a water connection and have auto-fill. So, the steam table will add water as needed through-out the day. If you are filling manually and all of your pans fit nice and tight I think you should be able to get away without adding water for 8 hours or so. If you are busy and constantly changing pans, or if you have older pans that don't fit perfectly, you might need to add water every couple hours. Will it make your meat smell bad? I sure hope not. Holding hot food is an art form and different products can be held for different amounts of time. Chopped meat, like for tacos, should be able to be held for 4 hours or so. The fattier the meat the longer it will stay good in the steam table. Pork and chicken thighs can stay for 8 hours or more, but lean beef can start to get chewy after a few hours. This is great for recipes with sauce, like chile verde, but not great for leaner proteins that tend to dry out. I hope that answers your questions.
