Oh yeh! It would be perfect for architecture. You can get in much thinner too like 3 mm thick and all sorts of colours. I have a blog post on it on my new website when i publish it (later this year). Good luck. (am having visions of you building an entire city out of this stuff!)
No. It is a tricky question. I always say no. Some well known cake makers use it inside cakes (including one who does in a book) but I spoke to a maker of it who said no to this. We always cover ours with food safe tape or foil if going inside a cake. It is fine to use for the boards for cakes as people dont eat the fondant on the boards.
