I liked this video. Fast and to the point. I like the part where you used the smaller knife to remove the skin. Is it hard to use the single edged knife?
Saki630 you mean the one on 1:30? the long one, sashimi knife, is for flesh, and removing skin, the short one, deba knife, is for cutting bones and oroshi process. If you use sashimi knife in this process you might crack your knife.
