You can also just re-run the discard back through the kitchen aid again and it will strain even more out. That is why the food hopper is shaped like a basket/bowl so as to contain the softer second batch. Great video! Liked the comparison and the clear presentation.

The instructions for the Fruit/Vegetable Strainer attachment say to turn the mixer to speed 4, so I'm surprised you turned yours up even higher. A helpful video for this first time user of this attachment.
We use a medium speed. Two tall dollar store pitchers and run the waste through a second time. The strainer is a game changer if you do a lot of tomatoes. Highly recommend. We’ve had ours for five almost six seasons btw…it’s held up great
I peeled tomatoes in a canning factory back in my younger years, I never saw cuts in the skin, once blanched they went down the line, we had a special spoon like coring knife which we removed the core and skins in one motion
In the video, I explain that the meat grinder is essentially the fruit/vegetable strainer attachment minus a couple of parts. If you already have the meat grinder you can just order the extra accesories to turn it into the fruit/vegetable strainer. I was just wondering if your strainer attachment is still holding up? I went on the kitchenaid website and this attachment had poor ratings, mostly due to breakage of the strainer cone that the auger fits into. Is yours still working well? Thanks!
Hi there, my strainer attachment is working beautifully. I grew over 200 pounds of tomatoes this year and processed at least half of those into pasta sauce, using the fruit/vegetable strainer attachment.
Really thorough and well done! I enjoyed all of your helpful detail and warm manner. Your soft voice is lovely... maybe after a while you can invest in a clip on type mic (like @LivingTraditionsHomestead uses) it seemes to pick up voices a bit more than utensil sounds, but that might be editing as well. If you have a vitamix blender you can eliminate all the other machines. I have every attachment you have and over the years used the different ways of processing my tomatoes for sauce. Just core and remove the core and throw them into the vitamix and in a few minutes you have very thick sauce. No need to remove skin or seeds. Makes quick work of processing the sauce.
I've tried that, but it's not the same. We Italians definitely want the skin as well as seeds removed. Not bad if you are in a pinch though, so good advice on that end. We use the Kitchenaid fruit strainer and it comes out perfectly, is fast, and we put the discard through once or twice.

Thank you for your question. For the Cansanity "Pasta Sauce with Fresh Herbs" cansanity.com/?page_id=7453 do not add onions and peppers to this recipe. Peppers and onions are low acid vegetables and adding them to this recipe would change the acidity of the sauce. The acidity in any water bath processing recipe is important and should not be altered. Have you ever tried processing cranberries after they have been cooked. I prefer the jellied consistency minus the skins. What are your thoughts on try that process? Love your video.
I have not made cranberries that way. If you want the jellied consistency just make cranberry sauce with less water and press the sauce through a fine sieve. Refrigerate it for 2 hours and it should set up nice. So ingredients: 1 package of cranberry sauce, 1 cup or less if desired of sugar and 1/4 -1/3 cup water. Thanks for the compliment on the video 🙂
I always cut a cross on the bottom of the tomato first before blanching them. Don't have to boil the tomatoes then too long. The peel always comes off really easy. This step however is not necessary if using the KitchenAid fruit/vegetable strainer attachment.

I bought my food mill many years ago so I am sorry I don't know the brand. There is no label on it. It has all metal parts (no plastic) and it has held up fantastically.
So you really really really don't need to core the tomatoes? I knew the machines removed the skin and seeds but the Italian videos shows them coring the tomatoes by hand still. OMG so far we have put up 40 quarts of thick sauce (plum regal paste tomatoes) and the hand coring, scoring, deskinning, deseeding is brutal! Just bought the KitchenAid on sale at Costco and am planning on ordering the attachment.
@@cansanity Thank you! We have 20 quarts of cored and scored paste tomatoes that we threw in the freezer last night because it was just too late to start skinning and getting ready to cook down. The juicer should be here midweek so rather than continue processing tomorrow morning we may give ourselves a break and wait until it gets here then thaw and process them.
