The confidence he shows he's a master chef, is why I love him. Even in all the seriousness he brings to the table in helping people understand how important cooking is, he then turns around & does skillful things like this. A bit rough, but I can tell the knife wasn't at the sharpness he wanted because he seemed a little annoyed with it. You want an extremely sharp knife when you filet a fish from what I have been shown to do when I worked the butcher block in my teens

Yes, you have to hang upside down for 2 muniutes, and watch some tv then go walk your dog, that's how you get 11 equal pieces, works for me every time.

no its doesnt. With steel you only hone the knife, not sharpen it actually. So, yea its safe to use honing steel over food.
