Here is the link to the method I use for achieving sharp edges with chocolate ganache (credit: Shawna McGreevy): • How to Ganache (or but...
On this cake, I am using a 3:1 dark chocolate ganache ratio (that means three parts chocolate, one part cream). With milk or white chocolate ganache, I always go one propotion higher (4:1) as they are softer due to their composition.
The ganache ratio may vary, up or down, depending on the climate in your area. Cold, dry weather will require a lower chocolate proportion, while hot and humid enviroments may need go up a bit so your ganache base is hard enough for this method to work more effectively.
I hope you enjoy it! Please subscribe if you do, more english tutorials to come!

I have seen many panelling methods but I’ve never seen the upside down pinching it together method. I use this method all the time for square cakes when you pinch the side together with two fondant smoother‘s, and then it just kind of just pinches it right off on the square cakes, or anything that has edges, but not with an upside down panelling method and this is just brilliant usually you just cut out a circle and stick it on top but this pinching Method is brilliant! thank you for the help! making my daughter very difficult Rapunzel cake for her 18th birthday and it’s been quite challenging for me and the biggest thing I was afraid of was how the heck I was going to fondant the cake cause I’m not good at it but now I have a chance of finally making it look right!!! You should win award for this tip!!

Thank you for sharing your knowledge Lucia. I have always struggled with creating sharp edges, but following your instructions and using your techniques, my cake turned out perfectly. The best I've ever created. A HUGE THANK YOU!! It did take to me two attempts to roll the fondant around the cake successfully though. I did find that awkward, but with more practice I'll get there 😄

So I've finally tried your method. And for the first time after so many years of imperfect edges, success. Your method works. But very important that the base (buttercream or ganache) is smooth. Which is another tricky thing to do 😓 Thank you 💐💐💐💐

I have watched many, many “sharp edges”/panelling” tutorials. I have to say, this has been the most comprehensive explanation, with wonderful visuals to achieve the outcome. I also do the upside down method, but I’ve now learned some new tricks from you to help me. I especially like your idea of adding a ring holder to the acetate smoother. I love my acetate smoothers, but my biggest annoyance is that they tend to slip out of your hand. And I’ve always used a pizza cutter to remove my fondant. I can see that the craft knife has a much sharper blade to remove excess fondant. I have a craft knife, don’t know why I never thought to use it this way. Definitely will be trying this. 🥰

Try Fantasia Fondant, you won't regret it. It is a very forgiving fondant with a long work time, which makes it easy to work with for beginners and pros. Fantasia Fondant is formulated with elasticity making it a high performing fondant when covering cakes or performing in silicon cake molds. The colors of Fantasia Fondant are vivid and fadeproof. This fondant will not prematurely dry, crack, tear, break and 'elephant skin.' Offers a less sweet taste that resembled a homemade marshmallow fondant.
