Preserve the garden-fresh flavor of this spring vegetable by stashing them in the freezer.
Frozen asparagus maintains all the flavor you know and love. They don’t need to be unfrozen before using and make a wonderful addition to casseroles, quiche, and soups. They’re also ideal for making sauces and chopping them into fresh vinaigrette or dips.
Use frozen asparagus within eight to 12 months.

Just what I was looking for. Thanks! Wouldn't the discarded part of asparagus be ok to use in vegetable stock?

Absolutely. If it's store-bought, it's more "woody" because it's grown longer... especially if sold by weight. We have a 15-yo asparagus garden. We do not let it over-mature. It melts in your mouth and makes awesome asparagus soup.

Very informative! I have canned 20-pounds already and am looking to try to freeze the rest (10-pounds). I am going to give freezing a try this year as nothing beats fresh locally grown asparagus. I was amazed the first time eating it fresh from the farmers fields, there is no comparison to mass produced vegetables.

I snap off a spear from the garden and eat it on the spot! You're right--nothing compares to fresh asparagus.

Thanks Marie-France. That's a great tip about freezing them on a tray first so you don't get a big frozen lump later. :-)

You can eat that " woody part " by peeling it like a cucumber.
