I don't know that I will ever freeze dry candy but it I do, Bit-O-Honey is at the top of my list. It's probably my favorite candy but I don't really eat candy anymore.
I definitely watch your videos. We appreciate them. I’ve also used quite a few of your affiliate links to buy products. One thing I would caution or suggest: shouldn’t sharpen your knife over your cutting board. Does have small amounts of metal when you sharpen the knife and could go into the candy.
Thank you so much! I noticed you don't have a tray on the bottom shelf. Is this your standard for candy? I've had trouble with candy on the bottom shelf. Also, do you have any experience wrapping your rack in foil? Oh, and my bit-o-honey was brittle enough that I could just snap them in half. It was definitely quicker than having to cut them.
I need advice. Just did my first cycle last night. Had it on candy mode. I fell asleep and when I woke up this morning inside the machine was full of ice and I went to take out the candy, because of the condensation the candy was ruined. Any advice?
I've done milk duds and snickers and both turned out really good. The issue is that they very delicate so packaging them would be an issue with them getting crushed.
Notice you are using the mats in your trays….do they significantly reduce sticking? We’re considering getting a set or two….just wanted to get some pros/cons from a regular user. Thanks and appreciate the videos! 👍
Great observation! No they do not make a difference and I haven’t found Bit O Honeys to be sticky at all. The mats are handy to have but you don’t need them all the time.
If you have a harvest right, go to your customize screen before you start and you can select what the final dry time will be. If you have the latest software installed it will give you the option for candy mode
Dude this is my favorite candy ever! I missed buying it at the store today because I'm going to do my first time trying to freeze dry some Skittles and I bought some hot tamales. I've had my freeze dryer for 3 years just freeze drying fruits vegetables meat. I'm very confused with what you're talking about with warming the trays first and then freeze drying for only 3 - 4 hours. Everything I've learned you have to have the items frozen and then go through the process. Are you not freezing these candies? Because the freezing process takes like 9 hours I think.
I don't freeze any candies, I use Candy Mode with the 5.0 Harvest Right software or higher. If you have an older software, just bypass the freeze cycle by "canceling" once it's done with it's pre-freezing the chamber mode.

I do recommend using the silicone mats for certain candies that I don't to come out clumped together. For Bit-O-Honeys you don't need the mats with the holes. I also found trying to cut them whilst in the wrapper, sometimes pieces of the wrapper got stuck in the candy and had to be picked out. But it can work.
The Bit O' Honey is not mentioned anywhere in the video you linked of the top 20 things to freeze dry. (And you just said that it's your top number one. ??) Just a little confused.
Good catch, I put that video out so long ago that I sometimes forget which candies I mention and which ones I didn't. The Bit O' Honey is still one of my top sellers so I would recommend doing these candies for your business. Hope that clears up the confusion and thanks for watching!
Make sure you have the latest software, 5.0 or higher. Follow instructions in the manual to activate candy mode. Depending on the candy it should take 2-4 hours to get them to pop in texture and dried enough to package.
Correct, I freeze dry branded candy but I don't use the brand name in any manner (title, description etc). You need to chat with a trademark attorney for exact phrasing but you could say something in the description of your ingredients like "XXX is a trademark of YYY. (blank) is NOT associated with or sponsored or licensed by YYY in any way"
@@freezedriedbusiness I know if we buy chocolate from Hershey wholesale they let you use the logo and name going to look into it more for other candies. Great channel new fan👍
I use what I believe puts me in the best position to be successful in my business and having large machines and support is my priority. Harvest Right currently meets that requirement for me but I have heard of Blue Alpine and I’m interested in understanding their machine this year hopefully with an in person visit
@@freezedriedbusiness that's good that you're able to get good customer service from harvest right. I've heard a lot of bad reports from single unit sales from them. And not giving good customer service to them. Blue Alpine, being in Idaho could be easy to get a hold of , if any issues. I was able to pick my machine up and saved $100 and they gave me another set of trays and matts free as well
@@freezedriedbusiness last year I got cited at my inspection because an employee wasnt thinking and popped something in his mouth and then grabbed the trays to take them elsewhere in the kitchen. Single use gloves are contaminated after eating, drinking, smoking etc. He needed to change the gloves before touching the trays again. All of which Im sure you know. My inspector also makes sure that we change gloves when changing from vegetables to candy etc. Im not complaining- I understand why. But sometimes my summer helpers dont understand that gloves are not just an extension of their hands. The other time I got scolded was when an employee wore their apron into work. He took it home accidentally and so wore it in to work. Aprons need to be clean and contaminate free, not worn on the bus on the way to work. Question for you- If its not your kitchen do you need to do any inspections or take food handling classes? I assume they are part of your cottage food license?
