Should you blanch your green beans before freezing? In this comparison of blanching vs not blanching when freezing green beans, I will do a test to show you the colour and texture of the frozen green beans once prepared to eat! Also harvest beans with me and find out the varieties we grow!

Thank you so much for this! I was gifted some wonderful green beans from a friend's garden and need to freeze them since I won't eat them quickly enough. I was fretting about the whole blanching thing as I do not have a kitchen; just a tiny food prep area and an induction cooker. This video was a gift from heaven for me!!! Bless you ❤❤

Thanks for sharing. It's my first time freezing beans and so far I'[m seeing people prefer that non-blanched method. I'm going to try just freezing and we'll see. My wife likes canned beans so we'll have to compare them after.

I just harvested more beans today and needed YT to decide how I wanted to do this. Thanks for the vid. I have decided to not blanch but wanted to make sure before I started. BTW, I always thought blanching was just dumping them into boiling water for only about a minute or so and to not "cook" them. So your 2nd trial with two minutes was probably the most accurate way. But why bother like you demonstrated? Save time!😊

Great video! I'm growing green beans at the moment and have far more than I can use. Personally I prefer to blanch mine, and just boil them quickly before I eat them, but it's good to know I don't have to blanch them if I don't have time.

Great video. I never blanch before... and I will keep freezing it as raw. I did with fennel bulb sliced, and the secret is not allow air in, because will burn (dark) the top slices.

Hi Alana excellent video again thanks, the little experiment was very informative i didn't know how to blanch beans as we always just wash them in cold salted water then freeze them, but from now on we will cut some up for stews instead of leaving them all whole, it's a great feeling walking down the garden and walking back with a basket full of vegetables, Sue has just dug three carrots 🥕 for tea tomorrow they smell amazing,thanks again for sharing with us take care and stay safe 👍 😊 .

Blanched one got twice cooked in this test and became mushy. It would be interesting to compare only raw frozen ones being blanched later. My vote anyway is for raw frozen.

Hi Robert! I just put our corn down in the freezer and I still blanched the cobs for 3 minutes before cutting kernels off of the cobs. I just find the kernels cut off the cobs easier when I blanch first. I don't think it's necessary to do it though. Take care and have a great day! 😊🌻

Just wondering, could the length of time frozen affect the outcome? 5 days is just much shorter than how long I know I would probably have those babies in my freezer lol

Good morning! I always keep my beans much longer than 5 days too and the beans pretty much have the same texture for quite a long time I found. Now, I do believe different beans have different textures and some do need blanching...these ones were a bush bean and string less. Also, in my test, I should have accounted for the blanching time on the one batch and boiled them for less time than the unblanched ones. I hope that helps...it's a tricky thing to try to get as much as you can stored for winter at the height of harvest time. I'm always looking for ways to save a wee bit of time during the season! From what I’ve learned blanched foods will last longer in the feeezer (6-9 months). If you don’t blanch you need to use within a few months. Anyone else confirm this??

Enzyme Actions: Freezing just a couple days is most likely not long enough for your test as most of use keep beans frozen longer than that. It is my understanding that blanching stops enzyme actions which can cause loss of flavor, color and texture. I'm curious how the test would do after say 6 months.

I never blanch my veggies. Beans, capsicum, celery, corn on the cob - I just put them in a single layer on a tray in the freezer and when they’re frozen solid I bag them up.

Finished the last of last years fozen beans a few weeks ago. I didn't blanch and bagged them in portion size freezer bags after rinsing and drying. I always use a steamer to cook them about 5-7 minutes. Butter and seasoning after draining steamer of water no complaints. Freeze all my peppers pre-cut for cooking too, no blanching they work great in all dishes after months of being frozen.

When using zip bags, you should submerge them most of the way in cold water, to push out all the excess air. You will get a much better result. Blanched or not…

I suggest you put a bit of fat in a cast iron pan. Lightly stir fry your beans then add enough water to gently simmer your beans until fork tender.

WOW, just wow.... I am so happy to have stumbled across this video. My mother has blanched, he mother has blanched before the freezing. I needed to see what method was right for myself & family. Your video helped so much and saves time. I believe what I will do is blanch any veggies intended for the freeze process...I think 30 secs to kill any bacteria or microscopic bugs/eggs. THANK YOU!!! Bacteria and microscopic bugs won't do anything since they're frozen. When you'll take the vegetables out, you'll cook them anyway. Is the same proces of sanitizing before hand but not boilng them before freeze, your veggie's will stay firm and retains the freshness.

Would those varieties of beans that you , no need to ask, as I watched the start. As it is critical to know if you’re doing a large quantity. Just knowing if there stringless, makes life so much easier ( when top & tailing them) being able to get into a robotic mode helps when you’ have a large amount to do. But pay’s dividends knowing that there straight out your garden, fresh and crisp & nutritional.!

It sure would be great to omit blanching from the whole process of veggie preparation for freezing, but I’m wondering if a 5 day trial is actually long enough. Since blanching is supposed to greatly slow the process of decay or aging (as I understand it does), by inhibiting certain enzymes, it seems like a period of weeks-if not months-would be required to compare the two. Maybe not, but it seems like the breakdown in food quality would a slower process than a week (or less) would reveal. 🤔

Frozen veggies will never spoil once are kept in the frozen state. You can store meat for dozens of years like that, never mind vegetables. But when i say frozen, i mean temperatures below -5 Celsius.

I clean them dry completely and freeze in flat layers on cookie sheets. I’m retired I’ve got lots of time on my hands. Lol

I am also trying to determine the best way to store peas or beans. But not for cooking but just to preserve them for eating raw. They are always mushy after defrosting. In your case, the blanched beans will always turn mushy because you cut them and after blanching the water is trapped inside the beans. When freezing, the insides are now frozen water. Would like to try blanching UN-cut and see if better.

My observation: Blanching is supposed to slow down the enzyme action that causes nutrient loss. Your experiment didn't cover that, so I would say to use the unblanched beans first. Regardless of taste without the nutrients, You might as well eat cardboard.

You only cooked them 5 minutes? I always blanche my green beans and they are delicious. They key is cooking them correctly, with seasoning and salt. By the way, I am from the south

Sooooo I haven't been blanching and I've learned certain variety do better blanched. I'm growing Long Beans and they are fibrous if I don't blanch.

Hi there! Somebody else mentioned that they find their long bean variety was tough if they didn't blanch...that is a good tip to know about other varieties! Hello and thank you for watching! These beans that I used were a bush style bean but I have heard that the flat bean variety taste better when blanched. Apparently they are more woody when frozen without blanching. I hope that helps...take care and have a great evening!

I blanch because they hold up to freezing for longer periods. But to cook I just reheat them in the microwave or tip them into a stir fry since they are already cooked.

We grew beans for the first time last year and I froze them without blanching. Not sure what I did wrong, but the texture was terrible when I cooked them. They were super chewy , the color turned brownish and they were limp. That was after cooking for maybe 7 minutes.

Wow I watched your video before I realized we have the same unusual name. Thanks for the experiment. It just saved me a lot of time processing some of my beans. Good vid! We do everything different here. We blanch but pull beans out the second the water starts to roll. Put in ice water. Cook them for way longer. With a big ol chunk of sidemeat or fatback in em. And taters sometimes. Gonna have to try the unblanched way. I only ever ate crunchy beans at expensive restaurants. Usually whole.

I just did some this morning and I just set the timer for 2 minutes after I dumped them in and they didn't really come back to a boil but I suspect they will be just fine for soup and stew

I didnt even research beforehand i just put my green beans and runner beans from washing straight in the freezer. Ive done same with my beetroot. Froze without blancing. I hope my beetroot cooks ok i havent tried any yet. I do wonder when blanching the veg may lose some of its nutrients. Im glad i came across your video.

The results may be different in longer term. After a couple of months in the freezer there may be a difference? Thanks for the experiment.
