Another clear and incredibly useful tutorial Emily! I have a question - I've had trouble with coloured buttercream changing colour when I use a heated metal comb to smooth it out. On a recent cake, it ended up darker than I wanted it to be as a result of that final smoothing. I know I could make the colour lighter to begin with but it's hard to predict what you'll end up with, and very tricky if you're trying to match the colour to something in particular. Any tips?
Yes, that is a challenge with using heat to smooth! It’s best to let the metal cool down slightly so that it’s just warm, not hot, because heat does make the buttercream darker and not always evenly, so the colour can become patchy. If I use a torch to heat the metal, I rub it with a towel before using it on the cake so that it’s not too hot
