From an Janapese Shiitake farmer, the freshly picked meaty shiitake is the best on the grill. Grill quickly one side with slight butter in the cup and drip some soy sauce. Fabulous appetizer. I love tempra shiitake. You may eat tempra Shiitake with salt, soy sauce, or dipping sauce. The dipping sauce is one cup of Dashi water, one TBS of soy sauce, one TBS of sake, one TBS of mirin. The Dashi can be kept in the fridge for 1 week.
We get Shiitake Mushrooms from our CSA weekly box and used the last batch as a steak topper. We sauted the mushrooms with salt, fresh cracked black pepper, fresh garlic, onions and olive oil and a splash of Cognac and topped our steaks with that mix, it was wonderful.
i'm doing shiitake and pink oyster this year. the pink oysters are a warm weather mushroom. you can use straw or coffee grounds to grow them. just have to pasteurize your medium. shiitake's do best in oak logs.
You also can take dried mushrooms and run them through the food processor to make mushroom powder which can be jarred up and later used in gravies or anything else... stores easy and keeps good.

I cut them in large pieces with fresh sliced garlic cloves, sauté that, pour it over half brown & half wild rice as a side dish. Or I do the same sauté in a large pot with fresh cut Kale - With the pot lid on (stirring frequently). By the time the Kale wilts, it's done and that is an awesome "Hot Salad".
Hamburger + shitake = MacDonald's banckrupcy Mix shitake with the meat. Also use the shitake stock (plus a citrus fruit) to marinate the meat. Yummy!!! Try them out
Wow - how fun. We use mushrooms in almost everything. Twice baked potatoes, lentil soup, meatloaf, spaghetti, stuffed burgers, instead of burgers, grilled portobellos, omelets, pizza, chicken soup, potato soup, stroganoff and just about anything. Great video, thank you.

In Chinese cooking, I always use one or two (dried and then soaked) black mushrooms (same thing, just that the Chinese don't say Shiitake) to add some depth (umami)...

Shiitake mushrooms are used quite often in Japan. I've seen it put into their basic hotpots, fried with or without some sort of sauce, as well as different soups.
Country potato soup with mushrooms. Sauté mushrooms, potatoes, onions add minced garlic, flour to make a rue, add stock, diced carrots & celery, basil, Marjoram, dill salt, pepper, a bit of vermouth & creme fresh. :)
Artesian springs are the best! The town I live in has all groundwater. No water bills, just natural artesian water. I live out of town, but still groundwater. Through town, there are about 8 artesian springs flowing constantly!

Yes, he said that you can put tap water outside for a few days and the chlorine will evaporate out of it or you can use distilled water or non-chlorinated bottled water.
To add these mushrooms to Stuffed Bell Peppers, Dry them in a Dehydrator. Then soak them in Red Wine, Chop them into about 1/2" pieces, then add them to your rice and veg mixture instead of ground Meat. Bake as usual and enjoy! Totally delicious.
Did I say anything about flames? No. I am talking about water that pre-fracking well was as clear as glass, and post fracking well is coloured orange and so contaminated that the local township has had to hand out free bottled water to residents with their own wells.
Soaking and deep cooling the log makes the mycelium think that it is Autumn...when you see plentiful mushrooms growing outdoors. A second overnight dunk a few days after the first might help more mushrooms to start, and the ones that have started, to grow bigger. Gently twist the mushrooms off their bases so as to not leave a 'stump' to rot on the log.
Great video - I just uploaded my own version of the shitake mushroom log and saw your video pop up. My log is one of those compressed logs... got a really great harvest from it so far. Next time, I am going to buy the actual logs like you did since it can give you years of harvesting. Great tip about how to rotate the 2 logs. FYI - I did not use ice water in soaking mine and it still worked. I also used just plain faucet water w/out an issue too. :)

Nice video. So do you also grow a winter garden? If not, maybe you can make snow cones with fresh fruit syrups, or a sweet basil, or a spicy tomato granita for the winter season, though that might have been better for summer,lol.

What a unique thing to be able to grow indoors. Where does the second round of mushrooms come from? Is the log inoculated with mushroom spores internally so it keeps producing mushrooms?
Recipe: Bread the mushroom head and fry in hot oil. Serve in a sandwich OR with rice/ fries on side. (Breading: 1. dip both sides in flour; 2. coat both sides in whisked egg; cover in breadcrumbs generously= ready to fry in deep fryer) Make no cook sauce ("Tartar Martas") for mushroom-heads. (sauce: 1/2 cup of sour cream, 1/4 cup of mayo, 1/2 table spoon mustard, 1/2 table spoon lemon juice, black pepper to taste= mix well, ready to serve on mushroom heads).

Fresh shitake mushrooms should be kept in a brown paper bag in your fridge. To extend their life just slice and quick sauté with coconut oil one smashed clove of garlic,cool them, keep in the freezer for about two months. When defrosted and browned again in a sauté pan you can't tell they were ever frozen. Personally my favorite is to use them in soups. A miso soup with wood shiitakes takes on a meaty note with some baby book choy bean sprouts, enjoy!
My mushroom plugs have just arrived. The plan is to create a miniature yet natural, seasonal habitat on the south side of my home. It will be called The 7 Dwarf Grotto.I will incorporate ginseng, Shiitake mushrooms, hosta plants, and ferns. I've even read that morning glories are shade tolerant. So I plan on making a couple brush tipis covered in morning glory and moon flower for added shade. My questions are... Will the Shiitake mushroom return with each season if watered regularly during dry months, and will the spores seed additional logs that have been laid out?
i had campbells cream of celery soap , heat it on the stove,, and pop some of the shitakes in it,, heat 3 min more and u have one awesome soap for the winter,

How would hydrophonics work for saprophytic/ lignivorous mushrooms?? Drip irrigation? You can grow them on wood chips that you keep moist by a hydroponic drip system.
uhm, he bought it from a company that grows the spores onto the logs. He didn't just go out into the woods and think to himself "oh, this is a nice piece of wood .. I wonder if I can grow mushrooms on it." If you watched/listened to the video, you would have heard him explaining the process and saying that there is a link to the site in the description. :)
