In this episode of Pheebz to Table, Phoebe learns how to grow wasabi with Takamura Noritoshi, the 8th generation wasabi producer who runs Takaso Wasabi Farm (有限 会社 たか惣) in Nakaizu, Shizuoka. His family has been growing wasabi for 300 years, benefiting from the area’s ideal climate for wasabi production. Wasabi requires clean, running water, temperatures that are not too low, and abundant rainfall.
Step-by-step process of how to grow wasabi
Clean the swamp before planting wasabi using a water pump.
Mix the different-sized sand particles and flatten the ground.
Plant the wasabi seedlings one by one in their own bottomless, cylindrical pots.
After planting, the fields must be maintained. Pull weeds, pick up fallen leaves, control the sunlight by covering/uncovering the wasabi fields with nets, make sure the water is still flowing unblocked, etc.
18 months after planting, the wasabi is ready to harvest

Wow! What an experience visiting Takaso wasabi farm in Shizuoka Prefecture! I loved Takamura san! He was so fun and welcoming! What a pleasure it would be to visit this farm and meet this wonderful gentleman and his wife one day!

I love this episode! It was nice to see wasabi being enjoyed in other ways such as the wasabi miso and wasabi nori. Hopefully another wasabi episode goes more in depth into farming. Such as what alternative crops wasabi farmers use to keep the balance of nutrients in the soil.

Wasabi is so tricky to try to harvest,it grow in just some specific conditions,also was discovered by a japenesse farmer who bringed to a warlord who later become a Shogun and declared it wasabi as a national treasure :).

10:24 It’s counterintuitive but, in order to avoid (or lessen) the astringent sensation that comes out of your nostrils, you have to inhale through your nose and exhale through your mouth. As soon as you feel that spicy sensation welling up in your nostrils, give it a vigorous inhale then exhale through your mouth. Thank me later.

One of our juvenile plants has two leaves that have lost all green, almost a pale white now, they do not seem to be older leaves. Any recommendations? They are also in the same grow box as 3 others that look well. Thanks in advance
