To make scoby from scratch - takes 2 to 6 or 8 months depending on the surrounding Use sour fruits - I use pineapple and lime In a glass jar add ratio (roughly) 1 part sugar ( white or cane) 3 part sour fruits 10 part mineral water Mix in and leave in sit tight jar about 2 months After 2/3 months separate the fruit and juice Put juice in a clean jar don’t seal completely- use thick tea towel to cover up and seal with ribbon or rubber band and leave again for another 2-4 months depending how thick you want the scoby. Sometimes many layers of scoby are formed and the top most would be the strongest.

So how do I do it without anything but tea and sugar? I can't buy either scoby nor raw kombucha. Surely I can grow one naturally, how else would they have gotten here in the first place?

is there really no way to make a scoby without kombucha? I'm moving to a country that has no kombucha and would love to make it but it seems like you always need store bought even for making homemade. Doesn't make any sense to me.

Yep, the culture reproduces itself. So you need a culture to make more cultures. Hopefully you can smuggle some kombucha into the country! ;)

I did the added tea and sugar and I didn’t get a scoby. I’m going to try again with just the store bought kombucha. I’m sure that’s the way I made my first scoby 12 years ago…..just forgot. I want a fresh start cuz my scoby is tired.

Thanks to this series I have made three batches of delicious peach flavored kombucha! My scoby grew a second scoby which I will use to brew a pineapple flavored batch. Complete newbie and loving it

I did the same thing you did for growing a SCOBY, but after about 5 days the half-formed SCOBY sank and now there is another one growing. Is that OK? Also, I love your videos!

This is so confusing. You say using store bought kombucha to make a scoby isn’t that great. And then you said you used store bought kombucha to make tour scoby.

Because even though it's not ideal, it was still worth experimenting with just to see if it'd work. Also because store-bought kombucha is all some people have access to. I'm trying to give tips that fit different scenarios, even if it's not the best-case scenario. Does that help?

I did the same with a bottle of GT'S (but did add a little tea), and am on my 5th cycle of making good kombucha! Every batch has been super active. I hope it continues that way, I heard that maybe after the 10th cycle or so the SCOBY weakens. We will see. I just posted the day by day progression video on my channel. Thanks for sharing! (:

You prefer to NOT use store bought Kam to make your Skoby. Yet that's what you used in this video to make yours??? So.... Exactly what am I to use to make my Skoby? Exactly how do I make it then? We just let our tea concentrate sit for 3 or 4 weeks and a scoby formed. Since all the bacteria and yeast are in the air and tea, the pelical formed nicely

@@cachi-7878 its basically kombucha without the scoby. You mix the tea, water and sugar together and let sit till a scoby forms.

@@LT72884 wait, kombucha is the already fermented tea, to which you initially added sugar to create that fermentation. But you started with fresh tea + sugar and let it sit there for weeks, after which, a SCOBY formed. So it’s not a concentrated solution you started with, right? You prepared a normal tea, added sugar and let it ferment for weeks, and the SCOBY formed at the 3-4week mark. Am I understanding you correctly? If yes, once you remove that SCOBY from whatever liquid is leftover, can this concentrated fermented tea be used as a starter for a new batch, as YBK does in her process? Thanks.

@@cachi-7878 correct, its basically kombucha without the scoby like i aforementioned:) you can also take fresh kombucha and let it sit for a while and get a scoby to form as well. I personally use a higher content of tea than normal, so its more concentrated:)

I used that tea , but with the ginger flavor (by mistake), looks like a scoby is forming. Why should I have used flavorless ? Is the one growing going to be ok ?

I had too kombucha with flavour ginger!Maybe diferent your,make brew 1ferment with ginger (ginger tea +sugar) and scoby + started tea .But in mine I brewing 1frement with my scoby ginger(I get in my gingerbug).Of couse with sweet tea ...+ started or culture kombucha.And I got my kombucha with flavour ginger(smeal soo good!...I loved it!) with baby scoby too.Then I continous now with my new scoby(baby scoby I got).Is that same with your kombucha ginger flavour?!

Am I missing something? You say don't use kombucha from the store and then you tell us how you did a scoby from it????? and even so you don't give any details (how many grams of sugar and tea you used).

Yay! Thanks so much for your videos. Amazingly helpful! I started mine a couple of weeks ago with store-bought "raw/unfiltered" and I'm starting to see a 1/4" of a SCOBY forming! However, there are scary lookin' warts on the top of mine. Should I be worried. Everyone else's looks so flawless. haha There aren't any black spots or fuzzy mold, but just blisters. I'm also itching to put just a lil' bit more starter tea to it, because I feel like I didn't put enough with the sweet tea in the beginning. Should I just leave it alone?!

blisters are ok! sometimes, mine turn out bumpy too :) As long as the blisters are part of the SCOBY and not actually mold forming on top, you're golden.

I live in Korea and not many people know what kombucha is and not much information about how to make it. They do sell kombucha online here but the carbonation and the flavor was just too plain and way too sour. My family tried my homemade kombucha and now they are addicted to it. 4 May 20, absolutely could not find a bottle of unflavored kombucha, so I picked a brand that at least had a good bit of sediment at the bottom. I poured it into a wide mouth quart Mason jar, put a paper towel over it and used a ring to secure it. It is now sitting in a corner of my pantry with a dish towel wrapped around it. I guess I’ll take a peek at it in about four weeks unless you or someone else advises me differently. I’ll let you know how it goes.

Chrystalline Myers Yes! You need to put a lid on top so the carbonation does not escape and it stays in your kombucha during the second fermentation! You might want to check out her video about carbonation process😄

Chrystalline Myers Sorry about the misunderstanding! Yes, dark place is best for the kombucha because sunlight has antibacterial affect so it can kill the good yeast bacteria in your kombucha. I cover my kombucha with a small table cloth.

At the organic shop in France the kombucha is stored in the fridge and it truly is raw and it was very well fermented and I directly made a batch and had a nice scoby form. Actually two because I also checked and the first sank down. I used one batch with medicinal mushroom decoction and liver herbs and 1/5 of green tea and the otherone with green tea only. The green tea was probably too weak and I didn't get a scoby from that batch so I simply mixed the two liquids and it worked. Happy brewing and healing to everyone!

Recommended to use unflavored, but I've done a first fermentation brew with GTs Gingerade along with a SCOBY from a previous batch... turned out perfect! The SCOBY it formed was also perfect and healthy. I also did this "create your own SCOBY" method using tea/sugar and the Gingerade. It too turned into a nice healthy mother SCOBY.

I used left over floating scoby from a watermelon gt kombucha, then made a liter of green tea and poured it in the bottle and it fermented and tasted great in like less than a week

Ingesting cold or frozen foods oe drinks shocks the liver according to traditional Chinese and Indian medicine. The body has to heat it but to body temperature before it can be absorbed. I personally enjoy lukewarm liquids or room temperature at least.

So I tried doing it this way and it’s been 7 weeks and there’s no formation of Scoby at all but I do see that the tea has concentrated. I did peek at it one time around week 4 (moved it more than it should) and would that have ruined it? Should I still keep at it or just try again with a fresh bottle of store-bought kombucha? My place is at a constant 75F and I keep it under my sink.

Hi may I ask a question please? I have already a scoby however every time I brew a new batch the new scoby is very skinny and not nice and thick like yours... Kombucha tastes good and fizz however i cant seem to grow new healthy scobies. What am I doing wrong??

You aren't doing anything wrong. The scoby grown in this video was left alone extra long; and was formed in straight kombucha, rather than in sweet tea. That's probably why it's so thick and uniform in color

I have thinner SCOBY growth bc in my area the kombucha ferments pretty quickly. If you have to leave it longer, the pellicle will thicken. As long as you have good kombucha, I wouldn't worry about it. My jun pellicle gets thick within about 24 hours! It's crazy. My kombucha one always takes about 3-4 days to really see the pellicle forming. Both make great drinks.

Ok maybe am just jealous for nothing... Hiro (my scoby) ferments a gallon of sweet tea in a week and the new scoby is so thin thay it folds on itself and becomes almost a ball which i can not put on the old scoby!!! what to do hehe thanks for the replies ppl!!!

I wanted a thicker SCOBY than I had in the first two weeks from a full bottle of unpasteurized and unflavored Health Aid 'bucha (16 oz, I think), 3/4 gal of tea and 3/4 cup of white sugar. I left this for about four weeks and ended up with a 3/8 inch thick SCOBY that was more than tough enough to be handled and a very strong, but very well flavored 'bucha. Round two fermented in just over a week and was much more drinkable, where round three is in the jar now. From what I have learned from my experience, leaving it alone and giving it time seems to be the trick to a thick, healthy SCOBY.

Hi!!! I started making a batch, but I didn't put enough of the starting batch, it got moldy... So, I forgot about it for WEEKS, then I come back, and there I see! A new scoby formed! Does that mean that is now drinkable? The new scooby looks just perfect! But I'm sure it had mold some weeks ago, and the old scoby is in the bottom. What are your thoughts??? Thanks!!!

I have a scoby packet that said use by june 2019. Looking at it , it still looks good and has liquid. I am new to brewing kombucha so not sure if it is safe to use. What do you recommend?

@@Apoollo i tried an experiment growing from a raw kombucha unflavored, one raw with ginger and the 2019 scoby. All three did really good. The 2019 old scoby did the best. The old scoby even though it was old it still looked good and not dried. I would recommend doing the same experiment.

@marcel deac, it's to monitor the temp. Kombucha brews best between 68-86 F. I brewed my first batch this winter and it was too cold so it grew mold :(. I just brewed my 2nd batch last week and used a heat map this time which kept the temp ~80 (I wasn't too picky about the actual temp) and SCOBY grew faster and healthier!

Wouldn't pasteurization kill strains? That's the whole thing with raw milk. Do they just kill off like 70% of the bottle or add something that inhibits it from further growth?

Hi I make preserves....I did peppers and with one month was a scobby on it ....what I have done .. ....can I have help it I don't put sugar on my preserves only vinegar and peppers . ...its a very healthy one

I've grown my 1st SCOBY. Because I only have 1/2 gallon mason jars, I split the SCOBY lengthwise. I put each 1/2 in separate jars with tea to brew on Tuesday. I just looked at my jars, both SCOBYs sank and I think new SCOBYs started to grow at the top of the tea. What should I do? Should I continue to allow them to grow and start over with the new SCOBYs? Should I go on to the 2nd fermentation?

@YouBrewKombucha Hi there, I am brewing my first batch of kombucha with a fresh pellicle and of course starter tea; however, I am in day 7 and my scoby is still thin and translucent. Do you have any advice? Should I wait until it gets thicker?

I am starting all over with my kombucha because I don't know why but after 3-4 years it stopped making new scobies and even the kombucha liquid wasn't strong enough for second fermentation. I bought the same store kombucha that I used when I first grew my scoby, but this time I will follow my method and just leave it alone in the mason jar with the cheese cloth. Let's see how it works.

So just to be clear. If I want to make my own scoby from scratch without any assistance, I simply brew some tea and add sugar, place in a glass jar, cover with a (breathable/cotton) cloth, then let sit in a dark place for up to seven weeks? Is that it?

No. You would need some raw and organic kombucha to get the colony of bacteria and yeasts needed to get the brew going. Rewatch the video and you’ll see the bottle of kombucha she bought

@@ericcarve4476 Thank you for responding. Yes, I saw the bottle she bought-the brand I too usually buy; however; I thought there was a way of making our "own kombucha SCOBY" without the use of the store bought kombucha. Cheers!

Sade * indeed, someone ages ago put the right components together to have their tea ferment with the right bacteria and yeast. Likely it was an accident, serendipitous accident. You could try, and 6 weeks later conclude if you were successful or not. Or you could spend $4 and after 6 weeks have nearly 100% success. :)

I tried to grow a scoby the usual way that's shown on RU-vid with the tea and the commercial Kombucha and the first lot got mould. Don't know why. Now I have a feeling the second lot is begining to get the mould. There is sediment on the bottom or else its a scoby. I'm worried about the mould though. I can't get the type of Kombucha that you have. I might have to get one online and then who is a trusted source. I'm in Ireland

awesome! But can I use the kombucha-liquid from this self made scoby as a starterliquid for the new kombucha? Or do I have to keep this liquid to put the scoby back in? And how do I have to feed it? 😱 Thank you so much

She has a video on how to feed your scoby hotel. If you make a scoby and starter, then feed it some later, that food will convert to starter. Later you use that starter in your other batches, and keep the colony happy and growing.

You could, if you are able to stomach highly acidic vinegar. Most people do not find that edible or drinkable.

Not a question per say, but I stay in India where weather temperature is quite warm on general. My kombucha brews up in 2-4 days. If i leave it for 7 days it turns super acidic. Just wanted to know if others face this too and if this is ok.

Yes! That's OK as long as you're OK with how it tastes. :) You'll just need to bottle/flavor it and refrigerate it sooner.

I started my own original with that same bottle but with a full gallon of bucha tea... It took 6 weeks and I had a large@1" scoby and @2 1/2 cups starter tea, added another gallon of tea to it and that was over a year ago now... Thanks to you and questions you answered super fast I've got 5- 3 gallon jars and my gardens get Scobies, I make fruit leather with them which is fantastic, and have given babies to so many people... Made a dozen second ferments a week for a gal I worked with for a while too lol

I love your videos and your website. It gave me great inspiration and courage to brew my own kombucha. Am having great success. I'm curious why you call the 'pellicle' the SCOBY when it is really just the cellulose produced by digested sugars.

I’ve had great success with the GTS brand. I did feed it, but only about a cup of tea with 2 tea bags and 3 tablespoons sugar sugar. It important to not overwhelm a new starter batch
