In the winter, when I have a recipe that calls for fresh herbs, I buy them from the grocery store and I always can't use it all. I take what ever I have left over, tie a cotton string around the stalk and hang it in my utility room from a water pipe and forget about it. Eventually dries out and then I put it in a plastic refrigerator bag and just ruff it up until the leaves are all crushed up. Pull out the sticks and your ready to go. Never buy dry.

Do you have a recommendation for any specific kind of high nitrogen fertilizer? Also how long did you keep your herbs in the oven? How many hours before they can be considered "ready" and still have the natural oils in them?

I like fish emulsion for organic. Any chemical type works too for emergency treatments. TIme drying varies greatly. Check on them every 30 minutes or so after about 1 hour. Youll feel when they are done.

My garage has a daytime temp of 140-150 Degrees. So I just put the leaves in an aluminum tray in the morning & in a day they are dry & ready to go!

How is the flavor on the dried chives and mint? I know oregano gets a stronger flavor when dried, rosemary, thyme and sage keep a lot of their flavor too. Basil and mint seems to lose its flavor for me when dried, but I might give it another shot this year.

Basil I usually freeze in oil in ice cube trays. It has a better flavor.

Chives are always delicious. I agree with all you wrote. Basil might be best air dried as would mint. The mint oil seems to permeate the house even at low temps.

I agree with Gary on air drying mint. An easy method I heard is to put your fresh mint in a paper bag then fold the top over, put a clip on, and then leave it in the back seat of your car. :) It's dark and warm, good enviro for dehydrating. Also paper bag absorbs moisture too. For basil, I heard that freezing in oil in ice cube trays is the best. Or you can preserve them in salt as well. In a clean DRY jar, use fine sea salt, canning salt or Himalayan salt. Place a thin layer of salt on the bottom and make a layer of basil one leaf thick and out the width of the container. Do a sprinkle of salt on top of that basil and layer basil 1 leaf thick again and repeat. Once you get to about 1.5" from top just top the jar off with salt. Give it a jiggle to get salt down into any airspace. Be good for 6mo+ longer in fridge. Another way with salt is to do 4:1 ratio Basil to salt and pulse in food processor or blender till well mixed. Store in jar in the fridge for up to 6mo. Got the salt preserving method from the Homesteading Family youtube channel. The air drying I got from the OFF GRID with DOUG & STACY youtube channel. :) Both great for prepper info! Gary's channel I watch for all things garden

Gary have you ever heard of freezing herbs by laying leaves on parchment paper and wrapping in foil and then use as needed? Is that okay?

Excellent video. STrangely I have a dehydrator I got form aldi I have never used that would do well for drying herbs Lol. I have a pineapple sage (I got it for the hummingbirds, the flowers are gorgeous). I guess I can cut that back too? Yours is the common sage. It doesn't look like it will bloom this year. Going to cut bee balm back. It's falling over but not blooming in year 1 seemingly. (got it for the bees).

@Gary Pilarchik If basil goes to seed is it salvageable. Can I propagate from it or will it always have the bitter flavor. I always pinch off the seed tops but I’m not sure if it tastes how it’s supposed to taste. Any help would be appreciated. Thank you

No you can propagate it often in water. And you can sometimes cut it back a few inches above the ground and it grows back nicely. I find temperatures have a lot to do with whether or not it works. Well if the pots drain, it is hard to over water. I would have to know more on how you are growing and feeding them.
