I had the opportunity to replace a tpo roof on a chipotle restaurant and also a daycare center and I was not able to find the right crew to do the work,I had called a couple of guys I knew who claimed to be roofers and when we met at the job to discuss the work,they had no idea what they were talking about and the prices they were quoting me just to do the tear off was ridiculous and then they said I can install the insulation and tpo myself.
Tpo seams require training, and I wouldn't do your first adhered application solo. That said, "roofers" is a wide category. Imagine if we just said "office staff" to summarize AP/AR accountants, secretaries, HR, IT, data entry, etc. There are 16 major types of roofing. Only 2 would understand this kind of install. You want a commercial flat roofer. Shinglers are the laughing stock of not just the industry but most countries don't even recognize them as roofs. You need a commercial company, not a standard residential. The best way to do this is figure out what manufacturer you want and call them, ask for recommendations for a TPO installer. The best TPO companies are Carlisle and GAF.

We hired one company installed a EverGuard TPO 60 mil Membrane recently. We found the TPO and underneath roof not adhesive but can feel they are separate when we tap the roof. Will this be an installation issue and how to fix it?
If it has plates on the seams and along the walls , your roof will still perform for many years. Glue mainly holds the membrane down from blowing off in high winds. We never worked with this product though I have installed fibertite and carlisle tpo for 10 years now. If you notice the field sheets pulling the wall membrane causing bridging then you have a problem but I think you are good. There are different types of installation . Mechanically fastened ( usually what we do with glue only on walls and curbs ), screwing down every seam like in this video with plates, and then there is chemically adhered with mainly all glue down to insulation . Never seen 2 before both will do well
Your roof system is not glued to the insation,each sheet of membrane is fastened to the deck with screws & plates every 8 inches,the next sheet laid out is welded over the screws and plates which allows for some wind uplift of the membrane which is 100% normal ,the best thing you can do for your roof is to have the same company who installed the roof send a man out twice a year to make sure all roof drains,scuppers and gutters are free of debris & flowing freely ,if your roof has heating & cooling equipment on it that needs service dont try to skimp & save a few bucks by only scheduling service with your HVAC contractor,call the roofing company that installed your roof & have them schedule a roofer with heat welding tools to effect a repair if needed be on sight assuring the HVAC contractor does not puncture the membrane by stepping on loose screws,dropping tools or cutting the membrane by sloppy handeling of HVAC sheet metal access doors .

I didnt see training expert Paulo doing a pre weld before hand welding a lap seam ,not good training film guys,a proper pre weld before the final hand weld is the only way any hand welded seam will pass inspection,im sure Paulo did a proper pre weld but GAF should have shown it instead of glossing over hand welding which is where most details leak.
