With practice and the right tactics, it can be done pretty consistently.

I find that rockets work wonders against ships in general, and it's easy to sink multiple ships with just one rocket-equipped Manta. In fact, I struggle to use them against anything BUT ships.

Absolutely, rockets are pound for pound the most lethal and efficient swordfish/needlefish slayers. Early game however, players may not have access to rockets, so alternate techniques can be good fallbacks.
