I typically use it with a froe to split wood more than anything.

Unless there is a lesson to be learned by using the chopsticks. Which there most certainly is. :)

I have all of those tools and then some. I just did this because I wanted to challenge myself.

The advice "don't cut toward yourself" applies mostly to novices that have little experience with the tools at hand. It's a simple rule that when followed prevents alot of accidents. But once you have mastered the tool and know the material you are working on it becomes less of a risk. In this situation he used the knife as a draw knife which is a pretty safe way to do it.
