A rusk is a hard twice-baked biscuit that can be made from bread, cake or quick bread type dough. Once that bread, cake or rusk dough has baked, it is then pulled apart (to make chunky rusks) or sliced and baked again until all the moisture has been driven off. Varieties of rusks can be found across the globe. Buttermilk rusks, in particular, originated in South Africa, as the quick- rising version using the traditional rusks that were made using sourdough or yeast to rise the popular breakfast and snack item.
