Hello my beautiful fam! Welcome back to my kitchen today I’m going to share with you how to make the best and most delicious Mexican snack, a chicharrones preparado o chilindrina, this is basically made with the large rectangular fried wheat chicharrón , which is then topped with chopped cabbage, diced tomatoes, cucumber, sour cream, cotija cheese, sliced avocados, cueritos (pickled pork rind slices), and hot sauce, usually salsa Valentina!!! I’m so excited to share it with you all because it’s seriously so delicious and my whole family enjoys them. Blenders I use at the moment, Vitamix a3500 and Ninja BL770

Ingredients:
Wheat chicharrones
Picked pork skin
Cucumber
Tomato
Avocado
Cabbage
Queso cotija
Crema mexicana or sour cream
Hot sauce, I like valentina
Lime
Oil

Duros preparados : we use pico de gallo, avocado, sour cream or refried beans as the base, cabbage, the cueritos, lime and either homemade salsa or valentina

I rub the ends of my cucumbers too, zucchini also. It’s some my mother and grandmother did. I skipped the step only once to test if it really made any difference. It was subtle but detectable so I’ve stuck with it ever since. I had a girlfriend who later explained some of the science to me. When you first pierce the flesh of those particular vegetables, they start to oxidize immediately and that oxidation travels fast, faster than an avocado or an apple or potato. By rubbing the ends, the oxidation slows down considerably. Unlike other vegetables that discolor when they oxidize, cucumber just turns bitter. You can counteract the effect with seasoning, especially salt which draws out the moisture and protects the flesh or sweetness like mirin or even sugar to just alter the flavor profile. But this is the wisdom of the ages passed down by generations. It isn’t just superstition or ritual. There really is something to it. Sorry for the long comment. Re: rubbing cucumber end to remove bitterness... My mom taught me that 5 decades ago and I always wondered did it really work. Yesterday, I watched a grandmother in Sri Lanka do the very same thing! I think there really must be something to it for the oral tradition to be so prevalent across so many cultures for such a long time. ❤️

Made this on the first day of the new year and it was awesome! Only changes I made was to add thinly sliced sirloin steak which I seasoned with taco seasoning, then chopped fine. Looking forward to making a seafood version of this snack. Will definitely be trying your other recipes! Happy I came across you channel.

We call them chicharrones preparados. Only difference of how we make them is we mix everything up, diced pork skins, cabbage, tomato & cilantro. We have never used cucumber but I will definitely try with it next time. We layer some sour cream, the mix, top it with more sour cream, salsa Valentina, avocado and finally queso cotija. Omg my mouth just got so watery!! 🤤🤤🤤 I'm making some later. 😉😋

Duros (chicharrones de harina) are actually made from wheat but have a similar texture to pork skins. So you should be able to safely eat them!
