Well this work if I use just the shortening to grease the pan and no breadcrumbs or flour on top of that?

I haven't tried with just shortening on this pan, so I'm not sure. On some of my other plans, I find that just shortening doesn't release as cleanly. Adding that layer of flour works great for me.
