The dough recipe is 357 grams of water (which is about 1.5 cups, cool or lukewarm is fine), 6 grams or two teaspoons of yeast, 525 grams of bread flour (which is about 3.5 cups), 12 grams or a tablespoon of sugar, If you have it I recommend 10 grams or a tablespoon of malt powder to get extra browning on the crust, 12 grams or two teaspoons of seat salt or kosher salt, and 26 grams or two tablespoons of extra virgin olive oil.
This is a 68% hydration dough.
For this Little Ceasars style pizza, I would use an 11oz or 312g dough ball for the traditional 12” pizza. I have a 12.5” pan, so I’m using 11.8oz. If you have a 14” pan, use a 16.4 oz or 465 g dough ball for a 14” pizza.
