Mam I always like your video. I always see and follow u. U have make truffle sauce cake. In this which cream u have used , and which butter salt or unsaulted. U have make truffle sauce two times. While making truffle sauce we kept in refrigerator for set or room temp. I will try.
easy to do....get a rectangle piece of acetate (a firmer type of food grade plastic) and do diagonal lines one way, then the other direction, and then roll it in the shape of a tube and tape the plastic so it keeps the shape then cool and release....very simple

For setting in the freezer just for until the icing has set maybe 10 mins but if u put it in the fridge then it will take longer mayb 30/40 mins After the cake is finished keep in the fridge . Take it out 20/30 mins before you eat it

Maybe you are over baking? Cake kept in the fridge hardens a bit like butter but once u take it out , it should soften after sometime You can also add 1/4 cup of oil and 50 gms of butter instead of 100 gms of butter and add 1/4 cup of milk powder

Thanku so much🌷🌷 Pls do watch the video how to melt chocolate. Yes u can remelt the chocolate safely in the microwave but very short bursts like 2 seconds at a time , with the icing bag. Or u can use a hair dryer. I hope this helps.

The last truffle sauce was a different one, with different proportions of chocolate and cream. This will be thinner in consistency. The first truffle sauce you can use to pipe any design as with that the shape will be easier to hold
