Ingredients
2 cups whole milk
1 cup heavy cream
1 pkg 5oz Jello Cook & Serve Coconut Pudding
1/2 cup coconut flakes
1 cup miniature marshmallows
1 Tsp of vanilla extract
1 prepared pie crust
8 oz Coolwhip
Toasted coconut for garnish
Method
Pour milk, cream and pudding mix into a heavy bottomed saucepan. Bring to low boil and cook until mixture has thickened. Approximately 5 minutes. Stir continuously.
Remove from heat. Add in marshmallows, coconut and vanilla. Stir until marshmallows have melted.
Pour filling into prepared pie crust. Refrigerate until completely chilled. Top with Coolwhip and garnish with toasted coconut flakes.
