Want to learn how to make a spiced rum? We took a distilled rum that we made a few weeks ago and ran it again with some sweet orange peel and cinnamon sticks to spice it up! In this video, you're learn not just how to make a spiced rum, but also how to post-infuse flavor in your moonshine. A perfect batch for the holiday season that we had a lot of fun making. Sounds like a great opportunity to develop a piece of equipment that will allow a bypass around the gin basket until hearts are reached, good luck

We've been researching hard on different bypass valves for Thumpers, gin stills etc. Our schedule has been a little crazy, but we hope to have a prototype out some time in 2025

This may or may not be a silly question - Why include the fore shots in the second run? If you simply ran the still with the hearts and maybe a small dip into the tails would you simplify the process?

Hi, Daniel. Yes, this is exactly right. We actually included our heads (not foreshots, they were pitched) into this infusion run. Typically, you would just want the hearts and tails in your infusion run.

Orange essence, mostly d-Limonene, vaporizes at 176°C. While the ethanol will serve as a solvent to pull some from the basket if you're looking for significant orange you won't get hot enough. Infusion is essential.

Thanks for the cool note! But, we don't want the essence to vaporize, right? Isn't it better to keep it under the vaporization point so that the vapor from the ethanol (that is boiling) can infuse with the oranges as it passes through?

Would you add your dunder during fermentation or distillation?

Personally, if the dunder was fermented with a fresh pack of yeast, I'd throw it into the distiller.
