Strawberry Rhubarb Cheesecake Bars
PREP 25 min. + chilling | COOK 31 min + cooling | MAKES 24 servings
Ingredients:
1 ½ cups all-purpose flour
½ cup packed brown sugar
Dash kosher salt
¾ cup cold butter, cubed
½ cup finely chopped pecans
FILLING
1 (8 oz.) pkg. plus 4 oz. cream cheese, softened
6 Tbsp. sugar
3 Tbsp. 2% milk
4 tsp. lemon juice
½ tsp. vanilla extract
Dash kosher salt
2 large eggs, room temperature, lightly beaten
JAM
¾ cup sugar
3 Tbsp. cornstarch
2 cups chopped fresh strawberries
2 cups sliced fresh or frozen rhubarb
4 tsp. lemon juice
Directions:
1. In a small bowl, mix flour, brown sugar, and salt; cut in butter until crumbly. Stir in pecans.
2. Press into bottom of the Inner Pot. Turn dial to Air Fry and adjust Temperature to 325°F. Press Timer and adjust to 10 minutes. Close the Air Frying Lid and press Start. Cook until edges just begin to brown. Transfer Inner Pot to a wire rack to cool completely.
3. In a large bowl, beat cream cheese and sugar with a mixer on medium until smooth. Beat in milk, lemon juice, vanilla, and salt. Add egg; beat on low just until blended. Pour over cooled crust.
4. Return Inner Pot to Base. Turn dial to Air Fry and adjust Temperature to 325°F. Press Timer and adjust to 15 minutes. Close the Air Frying Lid and press Start. Cook until filling is set. Transfer the Inner Pot to a wire rack to cool 1 hour.
5. For jam, in a small saucepan, mix sugar, and cornstarch. Add strawberries, rhubarb, and lemon juice. Bring to a boil. Reduce heat; simmer, uncovered, until mixture begins to thicken, 6 to 8 minutes. Cool completely. Spread over filling. Refrigerate until set, 8 hours or overnight. Cut into bars.
