Homemade Air Fryer Pizza Pockets
COOK TIME: 15 min
SERVES: 20 pizza pockets
INGREDIENTS
• 20 Masa empanada rounds, 4" size
• 40 slices pepperoni, chopped
• 1/2 cup chopped mushrooms
• 1 cup pizza sauce
• ½ cup shredded Mozzarella cheese or pizza blend
• 1 teaspoon dried oregano
• water for sealing the edges
PREPARATION STEPS
1. Mix together the chopped pepperoni, mushrooms and pizza sauce.
2. Take one empanada round.
3. Place about 2 teaspoons of the pepperoni mixture just to one side of the middle of the round.
4. Sprinkle on about one teaspoon of shredded cheese.
5. Add just a pinch of dried oregano sprinkled over the top of the ingredients.
6. Fold over in half, using water to seal the edges.
7. Use the tines of a fork to press down on the edges to additionally secure the ends.
8. Spray the air fryer basket with cooking spray or use a piece of parchment, then place pizza pockets onto the racks. Lightly spray the tops with olive oil.
9. Air fry at 380°F for 14 minutes. Halfway through cooking, check on the pizza pockets and rotate or turn between as needed for even cooking.
10. Allow to cool slightly at room temperature before serving with pizza sauce.
