Harira is more than just a soup. For most Moroccans, it is centre of the Iftar (Breaking fast) table. It has almost a cult status and it lives up to the hype. Harira is an amazing tomato soup. It’s a delicious mix of spices and fresh herbs, with vegetables (mainly tomato). You can cook it with or without meat but if you can, use bones and your Harira will be at whole other level !!!
Ingredients:
Beef - Cubed 200 g
Lentils 100 g
Chickpeas 100 g
Shaaria (Thin Pasta) 50 g
Smmen (Ghee) 2 tsp
Olive Oil 2 Tbsp
Salt 1.3 Tbsp
Pepper 1 tsp
Ginger 2/3 Tbsp
Turmeric 1 Tbsp
Cinnamon 1/4 tsp
Egg 1
Flour 50 g
Tomato Puree 400 g
Onions 1 Medium
Parsley 20 g
Cilantro 20 g
Bones 3 Small
Celery 70 g
Water for base mix 300 ml
Tomato Paste 40 g
Water for flour mix 400 ml
Water Hot 1000 ml

I am someone who really relies on measurements (just began learning how to cook) and my Moroccan mom who never uses measurements can’t help me much 🤪 I tried this the other day and IT WAS PERFECT!!!! It tasted JUST like my mom’s harira!!! My mom also watched the video and said it was 100% authentic and the same way she does it. Shukran bezaffff khoya, you are a lifesaver! Helping me learn my ancestors cooking!

It is a soup with a lot of ingredients and that is why it's so good. I think the thickness is just a personal choice but I can guarantee that it's delicious. Thank you for watching 😊

Wow. I can’t wait until I try this recipe. I do have a question though. If I were to use a regular pot instead of a pressure cooker would that be ok? Any advice would be helpful. Thank you

You can, but you need to cook it until the chickpeas and lentils are done. My advise is to soak them for a long time, like 24 hours, so that they are quite soft. Another solution will be to par boil them. Hope that helps 😊

If you made a dry roux with the flour first, then mixed it with a little of the hot broth from the pot before stirring in - you would add a lot of flavor to the soup compared to the plain flour slurry.

They should be relatively close. But the main point is to have the chickpeas, lentils, and meat cooked. Those are the things that will take the longest. So to verify, just taste/test them, if they are soft then you can proceed with the flour, eggs, and shaaria. I hope that helps. Mbrouk 3wachrek o Ramadane Karrem 😊

Street Harira is normally without meat to save on cost. At home you use meat because it adds flavor of course. At the end of the day, harira is good without meat as well 😊

Salam ! You can skip the meat entirely, it will still be flavorful. You don’t need the pressure cooker but you want to make sure that the chickpeas and lentils are soft. That’s it !!!

Mash'Allah. Very delicious and professionally done. But, khoya, I have a question, when I was in Morocco, not far from El Jdida, they don't make it like this, no meat either and I got told off for trying to add chicken to it when I made it hahaha.. I guess each part of Morocco make it differently or is this the original main traditional style? 😅😂

Thank you ! You can definitely make it without meat. Also there are regional variations. But I agree, no chicken in Hrira. Either no meat or beef. Not even lamb. I don’t think that adding chicken will make it worse. It will just not be authentic. At the end of the day, the meat is there for flavoring not as the main ingredient. Chicken doesn’t have a lot of flavor… Yes, I would say the way I make it is the main traditional way. 😊

Hi Simo, I’ve been using corn starch for thickening. It’s flavorless and you can’t tell any difference. I have celiac and I need to follow a strict GF diet. Your recipe looks yummy!! Thanks.

That would certainly work !!! Just few weeks ago I was diagnosed with a liver condition and I have to stop eating carbs, so I feel your pain ! I have to completely rework my diet. But yeah corn starch or even use cooked potatoes and carrots (blended) as a thickener ! I will start making more videos that have no gluten such as lentils and white beans. Also some Moroccan side dishes that are also gluten free. There is a lot of stuff we can eat still 😊😄💚💚

I’m sorry to hear about your liver condition. It’s hard at first to modify the diet but with time it gets easier. I’ve been following GF diet for 10 years. The hard part is going to Morocco and maintaining it because almost all the tasty food has gluten. I’m grateful that I found out about it before it’s too late. Best of luck and بشفاء انشاء الله

Hi Simo! I'm all prepped to make your recipe, but just wanted to ask: if I'm making the harira in advance and will be keeping a few portions in the fridge, do you recommend holding off on thickening the harira and/or adding the thin pasta (i bought Daria brand angel hair)? Just worried the pasta might absorb all the liquid or the soup get too 'lumpy'!

Hello ! Yes. You can hold off on thickening and pasta until you are ready to serve. Should not take long for it to be ready. I would say if you are planing to prepare Harrira in advance, I would freeze it and not keep it in the fridge. After two days in the fridge, it tends to develop a bit of acidity. I hope that helps 😊

You will have to cook it longer that is all. Cook until the meat, chickpeas, and lentils are soft. You might need to add water again if it reduces so much but otherwise no difference.

When we were kids we hated Harira and always had it last LOL We always rushed to eating starchy food like Melwi and milk and coffee and fill up with Zmita LOL This is a great recipe Simo, I am going to attempt to make a video of it; i like that you made it a bit thick, just the way i like it. My local grocery store used to make Harira during the month of Ramadan, many years ago, I fell in love with it and haven't really had it since, though I would pretty much eat it every single day back then & I'm not even Muslim.

It’s really an everyday soup. I would eat it everyday also. I love it as a breakfast. It reminds of the time as a kid, before you start fasting, you have left overs for breakfast 😄

For thickening, you can do it your style. If you are making 100g per person, you want it to be a little light. So I would add little by little until you like the consistency ! 😊

Start with the same amount of water but add just half a cup at a time, if the chickpeas or the lentils are not done yet. You can always reduce it at the end by cooking on high heat, just make sure to stir so that you don’t burn the bottom. My advise in general is, cut the meat into very small pieces and the chickpeas and lentils have to be hydrated over night.

Salam aleikum Simo, as a foreigner to Moroccan kitchen who has cooked some bowles of Harira before (thanks to my hubby) I dare to say you don't need to soak 3das (lentils) beforehand. They are just fine going straight to the soup. Planning on publishing new recipes any time soon?

Wa3alaykom salam, yes if you cook it in the pressure cooker, you can get away with it. I soak them and chickpeas so that I don’t have to cook it for too long. I’m working on a rghayef video 😊

Hi am planning an Iftar in our youth club and i need a recipe that is enough for 100 pepole, it will be small serving of Harira as we will be making other dishes. so its about 100g per person. How much indgridents i need??

The recipe technically can do 10 ppl with 100g each. So 10 times the ingredients. Seems like a big party 😊. Enjoy !!!

@@olawilkinson2742 Cooking in big quantities is difficult. I once cooked for a wedding of 50. It helps do all of the prep ahead of time. Have all of the ingredients ready in front of you, otherwise you might forget something. It’s a challenge but it’s fun 😄

Tomato purée is tomatoes peeled and blended into a liquid form. Paste is concentrated and dried. Also paste form 😄

Hi, thanks for sharing! I find your recipe one of the best I have seen for harira. just one question - do you use a little bit of hot pepper paste ( I mean harissa) for harira or not?

I’m glad you like the recipe. That would be a personal preference. Generally nothing spicy with Harira as, the stomach is normally sensitive during ramadane. I personally just add some lemon to the Harira. I would say no one that I know adds harissa to Harira. Of course, if it tastes better that way go ahead 😊
