Chicken Normandy Style for Christmas.
Northern France is famous for its apples, and this classic dish is made by simmering chicken in cider, a liquor made from apples, and cream.
It takes a little extra effort for a special occasion, and it will surely be a special Christmas dish for that reason. It's an impressive level of sauce, give it a try if you like!
Ingredients (about 2 servings)
2 chicken thighs with bones
2 apples
1/4 onion
2 cloves garlic
A splash of white wine
300 ml cider
250 ml chicken stock
200 ml heavy cream
30~40g butter (for sauce)
5-10g butter (for caramelizing)
A pinch of sugar
A pinch of sherry vinegar
