You can up the acidity two ways. Stir it at least every other day. Also, after the first week, add another cup (per gallon) of sugar and stir it in. The fermentation process eats all the sugar. I don’t bother to strain until it’s done fermenting. You’ll know it’s done when it doesn’t bubble when you stir it.

Andrea, this is a little off topic, but I noticed your Kitchen Aid stand mixer is tilted back. A repairman once told me not to leave mine like that when I wasn't using it as the grease inside can shift somewhat to the back. Just a hint I was not aware of and I doubt most people know it. I do know when you disassemble one there is food grade grease in there as I've replaced a couple things myself on mine.

It was surprising to find this video today, as just the other day, I went and bought some apples, because I was hungry for some fried Apples. I used to make them all the time when I was raising my three daughters, as it was a good cheap dessert. I then made some apple Turnovers. They turned out very tasty. I had to give some to my neighbors, and they loved them. They said they were better than the store bought ones. . Which of course, I agreed. I have one of those Apple peeler corers,,mine worked great, and it’s super fast. I’ve had mine for long time. I don’t have a farm or Homestead, as I live in the desert, just thought I would let you know about me. Of course, I didn’t have as many apples as you. 😱😱😱😱. Anyway glad to see how you accomplish those apples God Bless 🙏🏻🙏🏻😊🙏🏻🙏🏻

in my acv video i talked about how i use it for cleaning but i also use it as a hair rinse too. I do a baking soda/water scrub then rinse that off, then do a dilluted acv rinse and it really softens and detangles my long hair! I like to take about a tbs in a glass of water sometimes too, that way its not too strong. Good video! I always like seeing how other people make stuff ☺️

Perfect timing Andrea!! It’s definitely apple season here in Washington state. I’m not overflowing with apples right now, but I’m going to try a small batch. Can’t wait to make this and use it. I make an Asian dressing with ACV and it’s delicious! ACV, lemon juice, honey, ginger, couple splashes of soy sauce or liquid aminos, poppy seeds and a little mayo or EVOO depending on what I’m using it for. Just mix it all up in a pint mason jar and it keeps in the fridge for quite a while. For a grilled chicken Asian salad I use mayo, for a quick light side salad I use EVOO and serve with teriyaki chicken and rice. I need to get better about actually taking a spoonful a day.

Waxed paper worked well for keeping fruit flies too.... OK I have a hard cider now so I would strain and put in cool pantry? I don't use Apple cider vinagar cuz store bought yuck anyway... I learned how to make my own and used my apple trees apples kinda a few crab sized apples and more crab apples from down the road.... I love crab apple flavor and wanted that local flora... I started this and your sour dough starter same times about... Lots of local yeast in the air and on fruit then so it all worked well... But point I have sweet smelling hard cider now so strain and store and it will become vinagar like wine would do to clarify lol... I need to watch again I was just feeding bunnies in the middle I paused... Now the dogs... I will watch again later..... Thanks so much I'm lovin the ferment thing.... Gotta do beets Tuesday I think?

We use crabapples from the volunteer crabapple tree in our backyard. Since we have owned the place for over 10 years, and not once have we used pesticides, herbicides, commercial fertilizers or soil enhancements, I think we are safe in saying our crabapples, and all of our garden and yard produce (e.g. dandelions) are organic. This year I have four liters of ACV on the go, and the strained cores etc. are in the compost (we aren't allowed to have chickens here :( )

We also use non-organic apple scraps for making ACV, BUT we do not use the peels, only the cores, so that we aren't using any surface that was sprayed. Although I would love to buy organic apples, they are not available here, and to ship them to my location would make them so expensive they would be well out of reach financially. We are too old to start an orchard and expect to have produce, in reasonable quantities for preservation, before we kick the bucket, so we need to buy our tree fruits, and here they are all commercially grown and who knows what is sprayed on them. We do our best with what the is provided to us by the universe.
