In this video i'm going to show you how to make bacon at home!

You seriously can't beat homemade bacon, once you make it yourself, you won't buy it from the supermarket ever again!
As mentioned in the video, here's the homemade bacon cure I used. Always make sure to follow the instructions on your curing salt packet!
The below recipe is per 500g of pork belly:
- 1/4 teaspoon of curing salt
- 1 tablespoon of white sugar
- 3/4 tablespoon of kosher salt
- 1/2 teaspoon of cracked black pepper
- 1/2 teaspoon of paprika

Hi Aaron, first off i just want to say thanks, your channel was what inspired me to get into BBQ. I use a Blackjack for grilling and rotisserie, I use a Bronco for smoking. Anyway, ive just starting curing my first batch of bacon with the Smoky Pastures and I have some Dr Jay's arriving next week. My question is around the amount of Dr Jay's, it says a minimum of 25g per KG but do you have a recommendation of amount? Can i use more and if so is there any benefit or disadvantage in doing so? Just got the Dr jays and have applied it to a 2.5 kg slab of rindless belly It’s been curing for 24 hours now The next 5 days are going to take forever I’m thinking of smoking it with port barrel oak from natural smoke

Got mine sitting in the fridge with Dr Jays, let you know how it goes. Looks like it’ll be sitting in the fridge for 14 days in the cure due to work, will that be an issue?

Yes! Bacon! Your beginners brisket webber smoking turorial was my introduction to smoking. Failed my first attempt..meat was dry, lost alot of the juice and other factors. My second attempt was perfect. Now for BACON! Cheers mate 🍻 awesome videos

G,day Aaron. Just tasted my first attempt at making bacon, what fantastic flavours. I followed your steps for the most part, except I used a Pork Loin joint and Sechwan Pepper, Ground Cloves and Ground Garlic for the flavours. Really impressed many thanks. Next attempt I will be using boneless Pork Shoulder, can’t seem to find a decent pork belly without having to take out a loan to buy it. Cheers Iain

Just made first batch using bulletproof and smoked on Webber kettle with bourbon and pecan wood. Delicious taste but meat is a bit dry. Temp was reading perfect when I pulled it out. Maybe I’ll pull it out earlier than 140f?

Followed this to the letter with the doctor J's and I've never had bacon anywhere near this good. Best ever and has ruined regular bacon for me Question though, if I vac seal the bacon after smoking and before slicing, how long will it last in the fridge? And frozen?

I love making my own bacon I always use Dr jays miracle bacon cure. I also like to add meat church honey bacon rub after the curing stage the flavour is next level

I'm going to try this I got the cures yesterday. The instructions say to remove the skin but it doesn't look like you did, do you have to do that?

Fascinating. I didn’t know that you could buy cures for bacon but now I do. I’ve been curing bacon for a fair while and have always made my own cures so, look at that. I prefer to cold smoke my bacon though because I find it gives me more options. Such as when I fry some: it’s the first and only time it’s been cooked. Ensuring that the bacon forms the pellical guarantees that the smoke particles adhere to the meat. Great video!

Never given bacon ago. I do have 5 kgs of belly in the freezer. Just thinking fresh is probably best yeah. Not defrosting and curing. I need to give this ago as bacon from the shop is rubbish unless you spend $30+@kg for good stuff. Good job mate. Also is PL stacking your fridge for you. Haha

I've done 2 batches of the Bulletproof now (first times I've ever made bacon), and both came out amazing. It really isn't hard! It's spoiled me now, hard to go back to store bought after that!

I've done around 6 batches now and find maple bacon to be good.......really good. SM is amazing. It is the real deal! Haven't tried J's yet but keen as to try. JD is a cool dude👍

Hard to say, I'd say a week vac sealed fresh bit I usually freeze it vac sealed and should last 6+ months in freezer.

Great video mate. Been wanting to try smoking my own maple bacon for a while. I got Prague powder, but unsure on the ratio of salt and sugar. Is there a set ratio to weight to work it out? Less sugar to compensate for the maple?

It should state on your packet mate, I don't want to recommend a ratio as strength differs between brands/products. It's very important to follow packet guide.

@@iaincuthbertson735 Ah ok, my apologies. I've got the ratios I used in the description of video. Everyone is different with their flavours, some people go 50/50 salt n sugar, I went about 60/40 favouring sugar for this cook from memory.
