There are so many styles of banh xeo, an incredible Vietnamese dish.
Different sizes, fillings, dining wraps (some cooks use rice sheet wrappers), but the vast majority all fit this model and all SIZZLE, which is what the dishes name means.
Anyone who has eaten this dish loves it. I serve this for brunch a lot too, by the way. And for all the love of eating, I want you all to cook it yourself. The crepes are sturdy and easy to make, very forgiving, and all you do is fold them over the filling and enjoy with your favorite version of nuoc cham.
This is street food, restaurant food; humble despite the cost of seafood in our country. But with just a small amount per crepe, it’s a great way to stretch your seafood dollars.
