How to Make Bannock on a Canoe Trip - Bread in the Backcountry!

We love making fresh bannock on our family canoe trips! In this video, we show how we prepared bread to eat with our pasta dinner in Algonquin Provincial Park.
Bannock is traditional Indigenous food. Please see the video below for more information on this important staple.

Basically: 1 cup flour, 1 tbsp baking powder, 4 tbsp powdered milk, 1tbsp sugar

An alternative to Bannock bread and is easier for hiking/camping, is cornbread "Hoe Cake". 2 parts corn meal, 1 part instant "Just Add Water" pancake mix, salt, & enough water to form a thick batter. Skillet fry in some oil. The wheat gluten in instant pancake mix is the binder and is self rising. I premix dry ingredients in a baggie then use about 3 tablespoons of mix for a single serving. Add a little water for thick batter & skillet fry like a pancake.

And one night we were having spaghetti which it was Chino with meat already cooked into it. It was the gravel soak in the sauce all day long and then I cooked it for the evening OK so now I came up with a balance that I love. I use Italian seasoning in the bread, sun-dried tomatoes, Parmesan powder, Pecorino garlic powder, onion powder, minced onion, minced garlic those little round cheeses to come in the red wax. I keep a couple of those up, put them in the bread. I also put in, cubed, up pepperoni into the bread, and I made a double batch that night, and the kids just loved, and I do mean loved it. Now on the sweet side, I made one of the kids also light. It’s basically everything that was in my triple mix M&Ms, nuts, dried cherries, dried apricots, dates, and figs send me the banana mush from dried bananas, more M&Ms. Some caramel bits a little vanilla extract, some cinnamon or pumpkin seasoning. No they took longer to cook through and had to keep turning them so I didn’t burn the outside but the kids like those one afternoon was kind of a semi rainy day. It would rain on and off and on and off you know One of the days we are stuck under a tarp playing card games so I made the Bannick into little balls and cook them slowly with as much goop as I could put inside them. The Bannick was barely enough to hold it all together, but the kids love them, and because they were partially fried on the outside they were little bit greasy soon as I got them off the paper towel I rolled them in sugar, and they had a great outside finished them.

I always start with water and add the dry ingredients. That way the outside of the ball is always the dry part, and the wetness is inside. Fold, sprinkle, fold, sprinkle.

All the tricks that I do is, I put the water right in the bag with the mixed supplies for my bannock just a little bit of water when I’m ready to make it and I keep adding until it’s the right mixture but this way you can hand that bag off to your kids and they can eat it with their hands till it becomes pretty well ready to go in the pan. Secondly, I do also take an extra bag of flour, but I use that flour for a bunch of different things, so can I take usually a bag of bannock for each day even if I don’t use it I like to have enough to make up about church each day. I also have a little bags of stuff to add to them. White raisins, dried cranberries, nuts, chocolate chips, dried cherries, Dried blueberries, tried bananas, which I make into a mush gonna work in before adding water And a bunch of different types of spices from lemon peel, the orange peel vanilla extract cinnamon then for the savory side, sun-dried tomatoes, a packet of olives, various dried herbs, those 2 ounce packages of kraft cheese Parmesan cheese packets, Dried bacon, bits, dry, minced, garlic powder various herbs, dried onion, bits, everything seasoning, and I’ve even used some chicken bullion and it once which turned out really well and into my mix I’ve added powdered eggs just comes out a little bit more rich. I also increase the baking powder just by a little bit more than it calls for I put in some butter flavor seasoning. So another words you can make it from sweet to savory to very plain if you want but the container of Gee never thought about taking camping before that’s a really really good chip. Thank you for that part but I keep all those extra Ingredients to be added, depending on the meal or my mood but you don’t have to scrub the pan afterwards and Sunday off and take your kids camping my kids and my friends kids or if it’s an adults only camping trip he can hand it to somebody and they can without getting her hands dirty, or putting dirty hands on the food product. Sit there and eat until it’s all. worked in so I could eat a Ziploc bag with the actual zipper thing is you can tell if it’s closed it’s a good way to do it

My recipe is similar. Although I mix in ghee to the mix and use no powdered milk. Love ghee.

Great video..............Ghee is nothing more than regular butter with the milk solids removed....Just melt some butter and drain off the butter. Why buy it when you can make it.

My husband actually cooks all the meals and often does the dishes too! I can't complain! There is certainly a lot of work on a backcountry trip, but it's so worth it!
