How To Make Basanti Pulao // Bengali Basanti Pulao Recipe // बंगाली बसंती पुलाव की रेसिपी

Today's featured recipe is brought to you from the lands of Bengal, called as 'Basanti Pulao' where 'Basanti' coins to "Bright Yellow Rice" & 'Pulao' is a traditional one-pot aromatic rice infused with Indian flavors. It is served during special occassions along with Aloo Dum & here's how you can have this too for your next occassion!
Ingredients :
1. Gobindobhog Rice
2. Water
3. Salt (As Per Taste)
4. Turmeric Powder (0.5 Tablespoon)
5. Ghee (2 Tablespoon)
6. Refined Oil
7. Bay Leaves
8. Cardamom
9. Cloves
10. Cinnamon Sticks
11. Cashew Nuts
12. Raisins
13. Sugar (4 Tablespoon)
14. Green Chillies
Procedure :
1. Take gobindobhog rice and wash it thoroughly 3-4 times. Then lay it all out on a tray for 15 minutes until all of the water is dried out.
2. Now add salt, turmeric powder and ghee to the rice. With your hands, gently mix all of the rice evenly and keep it aside for another 10 minutes.
3. In a kadhai, add refined oil and heat it up. Next add bay leaves, followed by raw Indian spices (Cinnamon Sticks, Cardamom and Cloves) and saute for 2 minutes.
4. Add in the rice and give it a good mix. Now add green chillies and water (As per boiling requirements) and heat the rice on high flame till it starts to boil.
5. Once it starts to boil, reduce the flame to low, cover the lid and allow the rice to cook gently.
6. Till then, in a pre-heated tadka pan, add 2 tablespoon of Ghee and allow it to melt completely.
7. Next add the cashew nuts and fry them for 2-3 minutes, followed by the raisins fried for another 1-2 minutes.
8. Once the rice is all steamily cooked, you can add the dry fruits tadka onto the rice and lastly add, 4 tablespoon of sugar in the rice. Again, cook the rice for another 10 minutes to infuse all of the flavor of the tadka before you serve.
9. Serve hot and steamy with Aloo Dum!
