This is a great beef stew. I can not wait to get Kathy to make it for me . lol she is now the cook of stews and soups . I do most of the cooking but she makes soups and stews because she makes them so good. she brags on your recipes so since she learned how to make soups and stews, I told Mrs. Gina Jr. to go on with her bad self. lol I told her she would makes your stews and soups and I will make the rest of the recipes. lol It tickles her that I brag on her cooking your stews and soups. Love making beef stew in the slow cooker! ( I always add a bay leaf.) And add a slurry at the end to thicken . And even better the next day! Love the new kitchen!
Gina, Remember if you are using cooking wine off the shelf of a grocery store, reduce the amount of salt in your food because cooking wine is loaded with it. That's been my experience. Check the back label ingredients.

Haven't had homemade beef stew in such a long time. Your recipe looks delicious and this fall is the perfect time for it. I like butternut squash and think it is an exce!lent idea to add it. Add some crusty bread and I'm good! TFS!

i would have waited to put the potato and squash in the beef stew and let that beef cook until nice in tender then i would have skipped the corn in the can and used frozen or fresh peas baby carrots not the frozen chopped kind and lots of chunky onions and celery instead of bell peppers then I would have of course added diced amd stewed tomatoes and i would have blended whole tomatoes 🍅 add fresh herbs parsely a pinch basil pinch rosemary orgeno and then after everything marinates and cooks until profection I would have added my potatos and peas and squash then I would have served it with some butter bread 🍞 or garlic bread or cheese toast
