Recipes
🔹Brioche recipe for 6 buns
🔹YUDANE ingredients
4 Tbsp (60g) milk
2 Tbsp (27g) water
2 tbsp (20g) strong flour
🔹Brioche Ingredients
1/2 cup (120g) milk
1 tbsp (9g) dry yeast
2.5 cups (320g) strong flour
2.5 tbsp (35g) sugar
1 teaspoon (7g) salt
1 whole egg
1 egg yolk
3 tablespoons (42g) butter
1 beaten egg
1 tbsp (14g) melted butter
How to make
1. Make hot water seeds
Combine ingredients and heat to make a paste.
2. Heat milk to 35℃, add yeast, stir well, and leave for 8 minutes.
3. Add sugar and salt to strong flour and mix well.
4. Add the egg, milk with yeast, and cold YUDANE to the above mixture and mix well in a bowl.
Transfer to a table and knead until the dough is no longer sticky. (about 15-25 minutes).
6. Add the butter and knead again until it is incorporated.
7. Put the dough in a bowl and let it rise until it doubles in size (primary fermentation).
8. Place on a table and knead lightly to remove air.
9. Divide the dough into 6 equal parts, shape into a round, cover with a cloth and let it ferment for 2 hours.
10. Preheat the oven to 190°C.
When the dough has doubled in size, brush the surface with beaten egg and bake in the oven for about 16-18 minutes.
After baking, brush the top with melted butter while still hot.
Cheeseburger Recipe
🔹patties Materials 3 servings
500g ground beef
3g garlic powder
3g onion powder
5g salt
2g black pepper
Mix lightly and divide into about 85 grams (6 pieces)
🔹Ingredients for Burger Sauce
50g mayonnaise
30g ketchup
25g mustard
25g Worcestershire sauce (for pork cutlets)
12g capers
2 tsp black pepper
