When I was in my mid thirties I flew to Nassau and basically lost at the casino and only had ten dollars in my wallet. There was a food stand near the bridge and the special was steamed fish. I ordered a serving. It was only four dollars. Then I ordered another serving. It was served over white rice. I have until this day never eaten such a delicious fish. I asked the lovely lady if I could have half a serving because I only had two dollars and she served me another full plate. Beautiful memories!

This is one of my favorite dishes to cook. I use apple cider vinegar mixed with sugar and ketchup combined with all of the fresh seasonings that you use except for the pumpkin. I’m gonna try it the next time.
