How to Make Brown Sugar Boba Ice Cream Bars with SOFT Pearls

The Brown Sugar Boba Ice Cream Bars have been quite the craze, and as the weather gets warmer they are going to be in high demand - even with the exorbitant prices. We set out to recreate these Brown Sugar Boba Ice Cream Popsicles and we think we’ve got it. This was a lengthy experiment, with the most failures we’ve ever had… we stopped keeping track, definitely above 10 tries. Anyhow, we’ve gone through all the trials and tribulations so you don’t have to. Hint: the trick is all in the flour used to make the bubbles. Without further ado… here’s how you make Brown Sugar Boba Ice Cream Bars at home - from scratch!
Ingredients:
Boba / Bubbles / Pearls (however you fancy it)
- 1 cup Glutinous Rice Flour; plus additional for coating
- 1 cup Brown Sugar, Taiwanese version preferred
- 80mL Water, Boiling
Ice Cream
- 2 cups Heavy/Whipping Cream, Cold
- ¼ cup Condensed Milk, Cold
*also chill the mixing bowl
Brown Sugar Syrup
- ½ cup Brown Sugar
- ½ cup Water
- 1 ½ teaspoons Cornstarch mixed with ¼ cup Water
Recipe
Boba / Bubbles / Pearls
- In a large heatproof bowl add in glutinous rice flour and ½ cup of the brown sugar. Pour in boiling water, mix together with a spatula immediately. Fold together until all the flour, water, and sugar combines into a sticky dough.
- Being mindful that the ingredients may be hot, pour out onto a surface and knead until everything comes together and a soft spongy dough forms. It should not be dry or too wet and feel like very soft Playdough.
- Cover the dough in plastic wrap while making the dough balls. Prepare a bowl with a few tablespoons of the glutinous rice flour for the rolled balls.
- To make the balls, pinch off a piece and roll in your fingers or hands. These balls should be smaller than 1cm or ⅓ inch in diameter.
- Place the rolled ball into the bowl with glutinous rice flour. Carefully toss, mix, or stir the bowl every so often to ensure that the balls are nicely coated and don’t stick together.
- Bring a medium to large sized pot to a boil. Sift out any extra flour from the bubbles. Add the bubbles into the boiling water.
- Boil for 3-5 mins or until all are floating and soft.
- Heat a wok over medium heat. Add the other ½ cup of brown sugar to the wok. Add in the bubbles and stir constantly. Cook until the sugar has melted, caramelized, and it’s dark brown in color. Adjust the heat accordingly, don’t allow it to burn.
- Pour out into a heat proof bowl and set aside.
Sugar Syrup
- Heat a wok over medium heat. Add in ½ cup of brown sugar and a ½ cup of water.
- Stir constantly until sugar is melted, caramelized, and a nice dark brown color has formed. This should be a medium thickness in syrup.
- Turn down the heat, add the cornstarch slurry. Bring the heat back up, stir until a medium to thick syrup has formed. Set aside to cool. Once cooled, pour into a squeeze bottle.
Ice Cream
- Make sure to start with cold ingredients. In a large bowl, add the cream, mix with a hand mixer, or by hand until soft peaks have formed.
- Add in the condensed milk, continue mixing until well combined and not yet to a stiff peak.
Mould:
- Fill a piping bag or large ziplock bag with a mixture of ice cream and bubbles. To make life easier, I like to put my bag inside of my blender or tall container with the top folded over the edge. I layer a few spoons of ice cream and a spoon of bubbles. I then squish the mixture to disperse the bubbles throughout. Alternatively, you can just add the bubbles into the ice cream and stir. Then fill the bag with the mixture.
- Line the outside of the mould with some of the brown sugar syrup using a squeeze bottle. I like to do a thick layer at the top and allow the ice cream to push it down.
- Cut one corner of the bag and pipe into the mould, stop about ⅔ of the way. Tap the moulds on the table a few times to get rid of any bubbles. Continue filling the mould.
- Leave a little bit of space at the top for the popsicles to expand. Stick in your popsicle stick about ¾ of the way in.
- Tap moulds on the counter to remove any air bubbles.
- Place into the freezer for at least 6 hours and ideally overnight.
- To remove from mould allow to sit for a few mins on the counter.

Syrup: 1/2 cup brown sugar 1/2 cup water - boil but dont let it burn 1.5 tsp corn starch Bit of water - add into syrup - quickly boil and turn off (consistency should be nice and thick) DO NOT TASTE THE SUGAR Boba: 1 cup green glutinous flour 1/2 cup brown sugar 80ml hot water - Fold the dough (need to be soft, sticky,mooshy) -pick out the dough and roll, throw into bowl with some glutinous floor so they dont stick - boda shouldnt be too big - shift out the excess flour from rolled boba - into boiling water - floated on top, leave for couple minutes and turn off Couple Tsp brown sugar Boba - caramelise the boba with brown sugar 2 cup cold heavy cream - mix until slightly thick (soft peak) 1/2 cup cold condensed milk - mix until well combined - in a plastic zip bag, layer the cream and brown sugar boba in turn - drizzle brown sugar syrup on wall of popsicle stick container (thick ring around the top) - snip the end of plastic bag and fill the container - freeze - before eating, let the ice cream out for couple minutes to slightly melt

Sorry for the late reply. The problem I encountered with was the tapioca boba I made. It seems not as soft as I want it. I mixed tapioca flour with rice flour in ration 3:1. It tasted alright but elasticity of of boba is the pRoblem. Lol lol . I have not had the time to try your recipe yet, but hopefully the end of the month. So busy now

I made this! Thank you for making it. It's close. But the boba aren't as chewy and soft as the box ice cream once frozen. But everyone is super happy at my house. I used the Taiwan brown sugar and it's totally different to regular brown sugar! 😊

Great Video, had a great laugh watching it. I can imagine the fun you would have had with the experimentations. I probably would have given up after the first 2-3 attempts. I don’t eat a lot of the pearls, so didn’t realise that they go hard when they freeze. For the effort, I probably would have made Mochi ice cream, that was my favourite back in the late 90’s. So the temptation to taste the hot syrup/pearls is something I would be caught doing hahaha. I’ve burnt my tongue and roof of my mouth so many times I’m surprised I can still taste anything hahahaha.

Haha I'm glad you enjoyed it. LOL it wasn't that fun after failing for like the 5th time ... but that just made us more determined. Mochi ice cream would be great. Should give it a try lol... although mochi ice cream is less expensive here. We get 6 boxes of 9 (54 balls) at Costco for 14 dollars. Burn the roof of my mouth EVERY SINGLE time i have pizza .. and that's often lol

Thanks for the detailed video. Can we choose to not cook the pearls in the brown sugar syrup? So if we just roll them out, boil and then add to the ice cream later?

Should be ok. You might want to cook them a little longer so it’s completely soft.

Exactly! That’s what the cornstarch is for. We did it without previously and it crystallized and wasn’t usable.

You know what’s funny? I went back and checked the label. The sticker they put over the original didn’t say mochi just tapioca starch 🤨 the original label does say mochi. Lol... would’ve saved us a lot of time if it wasn’t for the damn import label.

I made this yesterday and it turned out quite well other than my syrup being too runny to create the marble effect (not a huge deal) and my pearls being quite hard. I was still able to chew them but they were harder than I expected! Any idea why?

Thanks for trying! The bubbles aren’t as soft as you would get in the store bought. Ours wasn’t hard at all but had a bit of a chew, like yours. In our research there’s a special chemical to keep it super soft, it wasn’t something home cooks can get.

I would say a minimum of 4 hours. Leave it out on the counter for afew mins before removing from the moulds.

Oooh, thank you for all the tips!! I have an ice cream maker so I think I'll try the brown sugar boba part & toss the rest in my standard vanilla mix! (I cook my base stovetop because its essentially a custard) Has anyone brewed black tea into their ice cream before? Did that work well?

I tried the recipe! And like other commenters say, the ice cream is good! But the “boba” pearls are tough to bite. As it stays in your mouth it softens a little though. But I think the ice cream itself is nice

Thanks for sharing! We found that leaving it out a few mins really helps soften it. It's still harder and has more bite than the store bought one though.

How much sugar did you use? In grams, it should be 100g flour, 50g sugar, and 80ml water.

Hmm. That’s the right ratio... try 10ml less water. What type of brown sugar are you using? Ours was slightly dryer and sandy. I’m curious if the grams=the same in cups. We converted it by measuring it and testing it ourself. Out of curiosity, what region are you in? The dough should definitely be shaggy when starting.

It makes 10-12 popsicles. For our leftover we just put it in a freezable container and you can have it as a scoopable ice cream!

For the extra ice cream and boba I just put them in a container and froze it as is. It will be good as a scoopable ice cream 😉

No because the boba itself is made of tapioca flour and they will turn hard after they freeze.

Babs Taklamu tapioca starch, yes - unfortunately, becomes super hard in the freezer, but it’s great for regular pearls. We have a video for that one. Have not tried cassava flour.

I would steep the tea in heated cream to infuse flavour then throughly chill it then whip. If you add water the ice cream would probably still freeze but would crystallize.

You can do that. Would taste awesome. Would warm it, steep it, then remove the bags. The sugar flavor is quite prominent so it may wash out the tea flavors though.

The cornstarch is used to thicken the brown syrup. It’s a bit of a trick to get to a thick consistency without it crystallizing and turning into candy. It makes it easier to deal with when filling the moulds.

It would not work as well, basically you're making mochi here so that it doesn't freeze as hard. Tapica balls would freeze to rocks.

I made it today the sugar and boba on point. The ice cream however is nothing like the bar. I don’t know if it’s because I used organic heavy cream but it was way too rich the flavor of the heavy cream is overpowering. May have to make it with only 1 cup heavy cream and 1 cup milk? Or something need to change lol

Thanks for trying! Would love to hear how it goes when you make it with milk. We chose to go with cream all the way because we were worried the milk would crystallize. I can see how it would be too rich in flavour.

You can try using tapioca starch. you can also skip it all together, the corn starch just makes it easier to deal with to squeeze out.

No, you can make ice cream whichever way you like. We used condensed milk because it’s the easiest way.

I made these but the boba was still hard after freezing it.. the ice cream was great! but the actual boba itself in the ice cream was disappointing.. :( any idea what went wrong or what step was supposed to prevent it from hardening?

Sorry to hear that it didn’t work out for you. :( The sugar in combination with the glutinous rice flour should have kept it soft. That’s the only place we couldn’t cut the sugar. Was it like a rock? It will be harder than the one you find in the store bought balls but still chewy. I do set it out on the counter for a few mins before eating though. That way I can get it out of the mould easier and the bubbles get a chance to soften just a bit as a byproduct.
