As a young wife living on the farm my husband grew up on, I met a wonderful woman, close to my age, who is still my friend today. This was in the 1970’s. She made her own luncheon meat and taught me how. You cook the meat, eg: a whole chicken or chicken pieces, in water or a pressure cooker. When done, bone it. Break up the meat into pieces and cut the skin as well into smaller pieces and add seasoning of your choice and toss. Dampen a white tea towel. Place the meat on the tea towel shaping it into a log shape. Begin rolling the tea towel and squeeze as you roll. Make sure you roll tightly. Twist the ends. Cover with plastic wrap and put it in the fridge overnight. It’s ready to slice the next day! Absolutely delicious. I need to make this now to make your wonderful chips and I’ll make the dip as well. Switched over to this video pausing the lasagne video. I've added the meat press and slicer to my amazon wish list. I recently watched the Reversed Carnivore season and it was awesome. I'm currently doing BBBE through the end of June but I'm seriously considering going to a mostly Carnivore diet starting in July. I'm down 112 pounds since 12/31/21 and I absolutely love your cooking videos. Going to Hawaii is a dream of mine so maybe one day I might actually get to meet you in person. @@MariaEmmerich taking a shot at gyro meat. 1 lb ground lamb 1 lb ground beef A bit less than 2T Primal Palate Super Gyro seasoning 1t garlic granules ½T onion granules About 1c water to help with pureeing I'm letting it sit overnight in the fridge before cooking. Partly to let the flavors meld, partly because it's bedtime. Will see how it turns out.
Or Grave’s? My daughter was dx’d in 2019 while low-carb for T1D but after carnivore, her very next labs only two weeks later they said she was 100% negative for Grave’s. After 6 labs over 3 months saying it was getting worse and she wouldn’t live without Methimazole. Mysterious thyroid storm could happen anytime if she didn’t take the Methimazole. Suddenly scary symptoms & suffering gone. Still can’t believe it.
How long between the Graves and T1D diagnosis? How old is she and how is her cholesterol levels? Our son (13 now) was diagnosed with T1D just before his 10th birthday. I'm a pharmacist and within days realized what garbage I was taught about managing diabetes. Went low carb within the first week but didn't have a handle on it for a few months. Our son never had a baseline lipid panel and was only tested once last year, everything looked perfect except his LDL was pretty high. Endo prescribed a statin, I said no.

Hi Maria, I just discovered you because I watched the Carnivore movie. 🙂 This is such a great idea making your own deli meat! And--LOL--as you were grinding the chicken in the blender I had a face palm moment because I literally NEVER thought about grinding my own chicken. 🤣😂 Like I just never thought about it and pay a lot more for the stuff that's already ground at the supermarket. I discovered your recipe here as I embarked on my Carnivore Journey on March 5, 2024. Growing up in Hawai’i, I've always embraced diverse cooking styles and love experimenting with different recipes. Cooking is one of my greatest passions, and the carnivore diet presents some intriguing challenges. While waiting for the press I ordered, I was encouraged to attempt the method shared in your comments. I'll be using a tofu press to see how it goes. So awesome that you make your own deli meat. I encourage u however to do a little research about salt bc u r missing out on all the health benefits it gives us. Redmond salt is the best in flavor and benefits! Commercial salt is cut with plastics and sugar, which legally does not have to be on the list of ingredients. A truer warning about salt would be to not eat commercial salt. In your research you will find that a good salt from an ancient underground sea. does NOT have anything to do with high blood pressure. Aw ok I was thinking in your Carnivore Lasagna recipe that the homemade deli meat was just cut with a meat slicer. This is quite interesting! Lots of ideas now for like ground chicken and other stuff.
Was looking at some other sausage/deli meat videos and starch is considered a binder. ¯\_(ツ)_/¯ One video that had add-ons particularly used the starch to add in keeping them stuck in the meat. Can't remember which one, but some add-ons (mixed in after the meat is pureed) I've seen are olives, cubed meat, pistachios, cubed cheese. I've also seen recipes without starch but with gelatin.
Hi, I'm fairly new to the carnivore diet and have a few questions. Is your dip also carnivore or is it just keto?? If not carnivore which ingredients don't fall into it? No, and I even say in my blog post you do not NEED them to make this. Use a wide mouth ball mason jar if you don't cant to buy the meat canister, and slice with a knife as thinly as possible :)

Doesn't that metal container heat up in the boiling water? Seems like you would have needed a potholder. Also, what happened to the spring? Did you remove that before cooking?? 🤔
I’m confused…when you took the lid off of the press I did not see the coil/spring mechanism that was there when you first put the lid on the meat press…..
When I done Paleo many years ago I took frozen chicken breast cut it super thin and made what I called chicken jerky ! it was good I made some thicker chicken pieces reciently starting carnivore but this concept sound good also!
I’m mostly carnivore and have lost 30 lbs. want to lose another 15-20. I have hoshimotos and didn’t realize you should eat differently until hearing you say it. I would be very interested in what you have to say.

Looks great! Thinking of making batches for kids lunch box but how long do they stay crispy in an airtight container - and if I refrigerate them will they go soggy? Can I store them in the pantry?

Greetings Maria! I just came across your lasagna recipe courtesy of Neisha and Ken Berry, its phenomenal!!! I wanted to make my own deli chicken since the store bought stuff is crazy expensive, but like you said, a mess of weird ingredients. I have a question for you about the cooking process. Have you or anyone tried cooking this in an instant pot? The dimensions of the press look like they'd fit inside easily. I was curious because this could possibly shorten cooking time by a fair bit without the extra water use, that and I love my instant pot
@@MariaEmmerich I did it! Just got my deli meat cooker in from amazon =) I live at 7k elevation and wanted to make super sure it was cooked through. I pressure cooked mine in my instant pot at high pressure for 40 minutes. Came out at 185* f so you could probably do less time. The saltiness is perfect and I am thrilled!!! Thank you so much Maria
I made the chicken lunch meat yesterday. And today I'm trying to get it out of the meat press. It won't budge. I scraped the edges numerous times, even had to cut through the center, hoping this would help loosen it. Warmed it under hot water (the outside of the press) Nothing. 😢 Help! Also, I noticed a grey color. Wiped the inside with a paper towel and grey residue came off! This is supposed to be stainless steel 😢 Now what?! I can't get it out of the press and now there's grey residue (even had it on my hands and on the plate). If I get it out, I'm afraid to eat it! Someone please help. 😮 UPDATE: I finally got the meat out of the press. I placed the press in simmering water for a minute or so. I cut the outer edges off but still not sure I should be eating it with the grey residue I was getting. 😮 What I realized was that I forgot to spray the inside of the press before putting the meat in! I did taste the meat after cutting off the edges, and was fantastically surprised at the flavor!!! Delicious. 🎉 And one more thing, I used chicken thigh meat, not chicken breast. Worked great, thanks Maria! Now to find a meat press that doesn't have a grey residue.

If I don’t want to make deli meat and just want to make carnivore chips, will it work the same to very thinly slice whichever meat I choose and dehydrate it?
Mmm... doesn't it supposed to not use condiments on the carnivore diet? or I'm I wrong and understood that only use Carnivore ingredients and Salt. Because the condiments brake the ketosis with the carbohydrates. I'm I wrong? I'm new in this diet
Low carb condiments will not break ketosis. The chips themselves are carnivore. If you add dipping sauces that needs to be taken into consideration depending on your goals :)
