2 C cassava flour 1/2 C coconut sugar 1 T baking powder 1 tsp baking soda 1 T cinnamon 2 T olive oil 1 C almond milk 1 egg Preheat oven to 350. Mix all dry ingredients. Then add the wet and mix thoroughly. She also added some blueberries. Lightly oil loaf pan. Add mixture and bake for 35 mins or until golden brown and a toothpick comes out clean. She did say you can add less coconut sugar if you want it not as sweet. And I’m assuming you can use whatever oil and milk you want or have as well.

I must have been doing something wrong because I followed the recipe to a t and the dough was crumbly even after adding an additional 1/4 cup of almond milk. Could the difference be that I used a different cassava flour?
Did you scoop (pack the flour) when you measured it? Flour for baking should be poured into or fluffed into the cup. Scooping out of the bag causes it to pack into the cup and you end up with too much. That would account for that problem.
It depends on where you purchase it, check on line you can find it for much less, you just have to be willing to search, it may even be more economic to check the stores in your home town, some Wal-Mart stores even have it @ a more reasonable price. I'm gluten intolerant so I check on line and in stores to get the best prices, I've never paid any where close to eight dollars a pound. use caution when shopping on line because you may see a price that seem unbelievable then they may charge you a shipping charge that's double or triple the price of the merchandise it self. right now I'm stocked up on coconut flour, brown and white rice flour, tapioca and cassava flour etc. which I store in the refrigerator and the freezer.
