Homemade squeaky cheese curds. Very easy recipe for beginners.

Cheddar Cheese Curds Recipe
1 gallon whole cow's milk (not ultra-pasteurized)
1/4 t mesophilic starter culture
1/2 t. liquid rennet mixed with 1 T. cool water
1/2 t. salt or to taste
Place milk in a stainless steel stock pot. (don't use aluminum)
Heat the milk in a double boiler to 85 degrees F. Remove from heat, add starter culture. Let sit for 2 mins. Stir in the culture. Let sit to ripen for 1 hour. After 1 hour is up, add the rennet and water mixture. Stir and let sit for another hour.
After 1 hour, test for a clean break. If you don't get a clean break, let sit a little longer. Once you have a clean break, cut the curds into 1/2 inch cubes. Let sit for 10 minutes to heal.
Next, return to the heat and slowly heat to 100 degrees F. This should take 30- 40 minutes. Stir gently periodically with a large spoon. When the temp. reaches 100F, hold it there for 30 minutes. The curds should be very distinct from the whey.
Drain the curds into a cheesecloth lined colander. Let sit for 30+ minutes, until it stops dripping. Turn the solid mass of curds onto a cutting board. Cut into several pieces. Place back into cheesecloth lined colander that is sitting in the 100 degree whey (or water). This warmth will cause more whey to be expelled from the curds. Periodically move and flip the curds. The cheddaring process takes about 2 hours. When done cheddaring, cut the mass into bite size pieces. Add salt and mix.
Your curds are ready to eat. Dry the curds on a parchment lined sheet for 12 - 24 hours in a cool place. Warmer temps (above 76 degrees) will cause the curds to take on a sharper flavor. Remember real cheese curds are to be eaten fresh and are not aged.

This brought back memories of my mother-in-law and her polish friends making cheese in the Dearborn house back in the eighties. I was intrigued then and still today. Thanks for sharing.

I live in a region that has historically been famous for its harshness. It also had an impact on the kitchens. I'm writing this because at the end of the movie you said you had to put it in the fridge. And as I remember from my childhood, such white cheese as it was not eaten in summer time, it already smelled bad. Nobody threw him out. He spent a day or two more mature. Such a fragrant cheese in the pan, melt, knock the egg a little salt and yummy. Oddly enough, the more this cheese smelled, the tastier it was. Unfortunately, now in the age of refrigerators you have to try to eat such cheese. You met with such a prescription.

It will continue to ripen at room temperature. If you don't like such a sharp cheese, then refrigerate. I don't refrigerate, but mine never last long enough. 😅

Hi Ronda, Jumped over to your kitchen channel to check out this cheese curd making process. Looks like a lot of work for a beginner to get it right. Do you ever do a deep fried breaded version? I'm a cheese lover so both, the string cheese look or breaded curd work for me. Interesting video!

It's probably not a cheese for first time cheese makers. But once you get a little experience, this cheese is pretty simple. We love fried cheese curds. 🤗

Wow that quite the process. If I didn't want to make curds could I form it into a round to make a ball of cheese instead? Kevin has one special lady and I hope he treats you like royalty. Between filming, editing cooking the daily meals and working on the farm you do have full day. Happy Valentine's Day.

Yes, if you don't want curds you could press it into a mold to make fresh cheddar cheese.

Interesting really enjoyed liked the walk around the farm. When is Sanders going to start buying his share of trucks I know he bought the riding tractor 🚜. The scare on your finger really looks ugly. Honestly, I've never cooked with this cheese. We only eat it fresh, but it is cheddar, so I'm sure it melts nicely.

The "whey" 😅 can be used for soooo many things. Use it while baking, fermenting veggies, cooking rice or pasta, feeding it to the chickens or pigs, feed plants with it, drink it, so many options. 😊
