Hello Ms. Aein, We recommend that the heat be lowered as soon as the vapo-valve clicks, even if it’s just one or two clicks, to prevent the flour from overcooking. If using the EOC, you can also try starting the heat at 275°F and reduce it to 225°F for 30-35 minutes once the vapo-valve begins to click, however, this may take a little bit longer.
