Shawarma is a middle eastern street food buzzing in Nigeria due to influence of Lebanese in the country. Beef or lamb or chicken etc grilled or roasted , wrapped in any flat bread or pita pocket (tortilla) and served with garlicky spicy sauce (Tahini)

Never thought of using hibiscus for red velvet! Great idea. I don't eat shawarma because I can't take sauces but love to learn about different techniques.

Not at all a bad recipe, thigh meat is an excellent value over breast, and is close enough to white breast meat for those of us who dislike dark poultry meat. One thing though: I would highly suggest dicing those cucumbers! those big long triangle slices tend to dominate the bite you take, and the texture often goes soggy and watery when heated which is disguised better when diced. Another suggestion, along with mayo consider replacing about 1/3 of the mayo with a store-bought 'creamy cucumber' salad dressing, it adds a very nice tangy bite to the mayo that goes well with homemade tahini or tuna salad or anything else you use mayonnaise for. Never heard of the hibiscus drink however, and I plan to try it asap! Thank you for taking the time to post this technique!

First of all, I would like to thank you for the wonderful Shawarma with a twist. I also admire your humorous presentation. Am so amazed at the way you tell people to make use of local ingredients in their cooking too. Al though I live in Kuwait, I must say I had tasted one of the best tasting Shawarma in Port Louise , Mauritius, which was prepared with a garlic flavored liquid cheese , no frills attached!! Stay blessed.

Crunchy Action. I love how you describe the different textures of the food. Will make this for my son's birthday party. Can never go wrong with Hibiscus flower tea. I sweeten mine with Grade A Maple syrup and during the warmer months I add slices of fresh fruit. It makes for a beautiful presentation in a glass pitcher.

That turned out quite nice, today I made Jollof rice using your red sauce and the your chicken stew, I just finished and it ALL came out WONDERFUL!!!

I marinate the chicken with tikka masala,lemon and yogurt,leave it for 2-3 hours and then sauté it in oil and garlic.I use tahini sauce and Ranch dressing,cucumber,shredded cabbage and a slice of cheese and some chilli sauce.And let me tell you it's HEAVENLY!!! It's soooo goood!!!

Great personality... We call the hibiscus flower, Sorrel in the Caribbean. In Dominica, this drink is served particularly during the Christmas season as this is when it blooms. Amazing the similarities. God bless.

Thanks Eleanor for asking. I have an all purpose seasoning called Priscilla's All Purpose seasoning on my website www.quickandtastee.com. Add a generous amount and rub it in. Let marinade for minimum of 4 hours.

That hibiscus flower juice we call it Karkadeh in Sudan 🇸🇩. However, we make it slightly different. We don’t boil it in hot water but after washing the flowers we let them soak in cold water for some time; and then later we sieve it

It's also done that way in Nigeria, some prefer boiling, some soak in cold water, depends on what pleases the person.
