How to Make Chocolate Stripes to Add WOW to Chocolate Cakes (Part II)

In this Part II video, we’ll take your completed chocolate paste design from the Part I video on this channel and complete the thin almond sponge cake layer that is applied to it to embellish your chocolate cakes. You’ll learn how to properly mix the cake batter, apply it to your chocolate paste design, bake it, then prep the finished layer to use as an embellish to your cakes and desserts.
Recipe:
¾ cup (85 g) almond meal
½ cup + 1 Tbsp (57 g) confectioners’ sugar
¼ cup (28 g) all-purpose flour
3 large (150 g) eggs
1 large (19 g) egg yolk
2 Tbsp (28 g) unsalted butter, melted
2 large (60 g) egg whites
2 Tbsp + 3/4 tsp (28 g) granulated sugar
Tools:
1 electric mixer (preferably two bowls)
1 balloon whisk
1 large offset spatula
1 small offset spatula or paring knife
1 half-sheet pan (separate from the one in Part I)
Parchment paper
Various cutters for trimming and cutting the cake shapes
Cake ring or springform pan ring (optional)
Tips & Extras:
- This type of sponge cake is often referred to as “jaconde.”
- The cake is very flexible and soft, which allows you to cut it and move it around with ease, but be careful as it can tear easily, too.
- When applying the cake layer on top, you’ll want to spread a thin layer of the cake’s filling to help adhere it.
- Freeze any leftover almond meal.
- To store left over strips and pieces, lay them on parchment paper sprayed with nonstick spray, then place another sprayed layer of parchment on top. Wrap them in plastic wrap then finally in heavy-duty aluminum foil. Wrapped this way they will freeze for a long time.
