How to make chocolate truffles with ganache rescue!
With Easter on the horizon I thought it would be a good idea to make some chocolate truffles. Things did not quite go to plan and the ganache separated because I over heated it. I managed to mix it all back together, the alcohol seemed to help but it might just have been that the ganache was also cooling down.
The final truffles were great, as good as the tennis ball sized ones that I used to buy in Covent Garden!
Ingredients :
300ml double cream
300g 70% dark chocolate
50g unsalted butter
Alcohol of choice if wanted. Other flavourings can be used if you would like to make non-alcoholic versions.
Cocoa powder / other coatings
360g milk chocolate for a chocolate coating.
