The solution to the setup being oddly balanced on the gimbal is to turn your phone / Beastgrip upside down. This best balances the lens horizontally. I've never needed counterweights like that.

NIce, man! Hey, the reason why you are using your phone to shoot films is because you want to use your phone to shoot films. The camera does not matter. If they want to buy a DSLR or mirrorless cam to shoot on, they can do that.
I have a similar crazy set up myself. My Beastgrip DOF adapter is attached to a Smallrig cage on a Moza Air Cross 2 with follow focus attached and Smallrig dual handle grip using an LG V60.

I suspect that the cloth is designed to be used like the cloths that large format photographers use for focusing and composing on a ground glass screen.

I'm actually surprised about the level of quality of video you can get out of an iPhone, but then I remembered the old debate, when DSLRs came out that could shoot decent video... If we go back in time a bit the sensors on video cameras were never really all that big... Until recently. I mean I'd like to see some side by side video with a mirrorless camera. but... This is the first iPhone rig I've legit seen that looks like it could actually take decent quality video.
For someone asking why invest in such setup for instead of a point and shoot or a low-end mirrorless camera.... There is one thing that the current high-end smartphones excel at than even the bmpcc4k and canon r5, that's dynamic range. I have tested my s20 against the likes of a6000, a6300 and even the a73. The dynamic range on my s20 is far better in most situations (of course due to the computational photography aspect). In low light, the a6000 and a6300 shoot horrible videos compared to the s20 where I do not see any noise till ISO 400. Adapting a camera lens with a of adapter to a high dynamic range sensor, well it can be amazing. Also not to mention the portability and usability of the smartphones.
Hardly a surprise because smartphone camera applies a high level of computational photography. For DSLR and Mirrorless camera, it's best to manually set it.
