A friend of mine went through with this recipe last night and he told me that it tastes almost exactly like the cola flavoured popsicles we used to have in Argentina in the late 90's/early 00's. That alone makes it a win for me.

Left this as a reply but I feel it deserves its own comment: Hi there! I make a lot of Cola at home for my family, you don't need ANY food coloring, no offense intended to FlavorLab but this isn't the best way to color it, and actually I'll tell you what I do and what Coca Cola itself does, and you don't need to buy anything extra! Here you go: when you're making the caramel at the beginning, add a little bit of water, like a few drops to a teaspoon, and cook it a bit longer than the video suggests, until it starts to smell very toasted a bit like chocolate chip cookies and turns ALMOST black, very dark red / very dark brown, then make the cola the rest of the way as the video suggests and it will be very dark without a need for added food color; what I'm telling you about is how to make "caramel coloring", you should look a recipe up here on youtube, it's the way store bought colas and root beers, and even some sauces and gravies, are colored! It can add a bitter / sour taste a bit like coffee, that you can reduce by adding more sugar and lime juice. And PS replace the carrier oil you're using with MCT oil, olive oil, vegetable oil, or canola oil, those won't get solid like coconut oil does when they get cold. And if you plan on making this a lot, you can put a whole bunch of the aromatics into a bunch of alcohol and leave it for a few weeks and you can make what's called a "flavor extract" or "tincture" and use that in place of the oil altogether, like was mentioned in the video 🤠

OK what I learned from my attempt: 1. I used ground cinnamon, nutmeg and coriander because un-ground ones were ridiculously expensive since they were only available in the Healthy Food section; it works OK, but use about half the amount of ground cinnamon; 2. If you're using ground ingredients, you must mix the oil during those 30 minutes or they might burn very easily and ruin the whole mixture; also it'll taint the oil dark brownish, but once you strain it it'll return to yellow; 3. 400 g of sugar is still hella sweet, I'll try 250 g next time; 4. For some reason when I poured the water into the caramel, it turned really red, like, literally blood. This is apparently normal; 5. I used lime juice concentrate (two tablespoons = one lime juice) and it did not turn green; but I'm still using a black food coloring next time because it looks too much like diluted energy drink; 6. Coffee filters take forever to strain the oil, I'll try cheese cloth or something along these lines next time.

To me, one of the most distinctive tastes of Coca Cola is the phosphoric acid. It separates it from most other sodas (besides cheerwine which tastes remarkably similar because it too contains phosphoric acid)

This is very enlightening. Thank you! When I crave a soda, i will remember citrus, spices, food color and ice. I am a lazy cook, so that will probably do it. It also reminds me of an alcohol drink called the "Tootsie Roll" that is made with Kahlua and Orange Juice. It really does taste like a tootsie roll candy. Today I only had coffee syrup, so i added some to orange juice. Ratios were a bit off, but it tasted good anyway.

I spent hours trying make this and it turned out to just taste like water, lemon and Sugar.

Great method. I personally don't use the essential oil method. I just dump the fresh 7x ingredients into the caramel + water, simmer for 20 min and strain with cheese cloth. I like to add some freshly grated ginger too for a bit of a bite and a tiny drop of vanilla essence. Works like a charm !

i made this today, the final product was actually pretty good, but the smell of it lead me to believe it was just going to taste like cinnamon so i was surprised when it tasted similar to coke.

4:34 Tip: Its easier to add water to caramel made with wet sugar. And preheating the water that you are going to add also helps a ton. You can use the microwave for that.

Fun fact if you get an orange peel and squeeze it that little bits of fluid that comes out is flammable. So if you hold a lighter next to the peel when you squeeze it it becomes a mini flame thrower.

Mine was super oily idk why, i used the exact amount he said plus it looked similar to his at the stage where he was infusing the oil, but when i drink my final product my lips get all oily.

Would it be possible to skip the oil and use alcohol as the flavor carrier? I know that's how a lot of extracts are made, does it work here or is the oil absolutely necessary to extract the compounds?
