How to Make Cold Kimchi Noodles. 

Joanne, I have been making and eating nothing but vegan Korean food for the last three weeks because of your channel. I love Asian food but have never ventured further than stir fry because I get overwhelmed in the kitchen. Your recipes have been so easy to follow and Korean flavors are so addicting that I keep coming back for more and trying new recipes. I just finished my first container of gochujang and that felt like an accomplishment because I’ve been using it so much. Anyway.. this was long but I want you to know that I appreciate you!

This may sound unrelated but it's not. A couple of month's ago I watched a RU-vid short where someone mentioned that there's a restaurant in Chicago that serves a sandwich with kimchi and beets. The person made her version with pan seared beets and a slice of melted cheese. The woman in the video said there's probably no way to cut beets without having beet stained hands. I've thought about that sandwich because it sounds delicious. I like pickled beets. I also used to own a Juiceman juicer back in the day. My Dr kept telling me to eat liver due to chronic low iron. So I did. My iron levels never budged. Then I was told to eqt calf liver since "It's more pure than a fully grown cow." I did that, as well as take an iron supplement with orange juice. The results?..... well my iron levels were the same but I was also chronically nauseous. So I would juice beets. The whole thing including the stem and the leaves, added carrots, some celery and an apple. It was the freshest "juice" I'd ever had. I previously disliked apple juice. Turns out it's the apple juice that are sold in stores that I didn't like. But that nagging nausea disappeared. Now I want a vitamix and a green smoothie. But back to that sandwich. I've been thinking what if the beets were roasted in the oven either whole or halved and then sliced? The bread being toasted sourdough possibly with roasted garlic smeared onto it? And though I've heard some cheeses like muenster don't have enough lactic acid to affect those like me whose body just up and decided it didn't like dairy. I stopped drinking cows milk years ago due to noticing I'd always had phlegm afterwards and never liked the taste. Anyway I kept thinking what if instead of cheese it was tofu either with a balsamic vinegar glaze drizzled over it? Or some kinda sauce that compliments the kimchi? But my thought was "What kind of sauce could compliment, but not compete with, the flavor of kimchi?" Now I think the sauce that compliments the kimchi could very well be the one you just made in this video. So I find myself once again thankful for having watched one of your videos. I feel a good kimchi, roasted beet sandwich with tofu will be thoroughly enjoyed in the very near future. Thanks!🙂

Want to know how you make your kimchi because no matter how many video I've watched, they all use fish sauce in it. I'm vegetarian and can't eat fish and it's byproducts.
