Molala cool, beautiful presentation and execution of this very enlightening precise experience, I’ve been trying to make a perfect matcha latte with perfect layering for months on end, I’ve figured out that sugar and sweetness must be concentrated on the milk, the milk must be cold at the very least and not too hot that it will melt the ice, if the ice melts rapidly, the water will diffuse into the milk making it less dense, now after providing the proper temperature milk you must then add any type of sweetener to the milk and mix cautiously, after doing so you may make the matcha with not little water, if those of you are asking kn what matcha to use you may have to go with premium high quality powder, ceremonial grade matcha is most preferable for making such a flawless layer of green and white, I’ve done this experiment many times with different grades, types, and brands of matcha yet they sink down to the milk ever so fast, therefore today I have tried using ceremonial grade matcha, I added roughly 4-5 grams and mixed it with very little water, but enough to fill the bowl’s surface area, I’ve then proceeded to whisk with a chaser in a up down motion with vigor, to make the matcha frothy and almost creating a layer of foam, after the matcha is complete add the matcha slowly into the milk and I promise you it will layer flawlessly. One mistake you made was adding the ice too early. You should have added the milk and syrup together, stirred and then FINISHED with the ice so it doesn't dilute the drink

Not much. I do this with regular instant coffee and a fork works fine to get the frothy texture. Not sure if that would be sacrilegious to matcha tea drinkers, but this is the latte version anyway so shouldn’t matter lol
Make sure you get quality matcha! Ensure the place knows about the harvest etc! Bad matcha will put you off haha. I recommend Matcha Botanicals (EU/US) or OMGtea (UK only, but not as good)
